Look I appreciate his point of view, but similarly how many Chinese people , especially the older gen, would be willing to buy char kuay teow or Hokkien mee from an Indian man? I would prefer buying briyani from an Indian man because if he grew up in in an indian household that would mean he’s more aware of Indian spices and culture. Most Chinese people don’t know much about Indian spices and culture.
Totally get where you’re coming from about familiarity with spices, but cooking skill isn’t locked to someone’s ethnicity. People of any background can learn, adapt, and master different cuisines if they put in the passion and work. Saying only one group can make a certain dish overlooks all the talented chefs who specialize in “foreign” cuisines. In the end, good food comes down to skill and respect for the cuisine-not just cultural background.
