I mean i never got sick of the overall food in italy, from arancine, to pizza, pasta, a lot of amazing cured meats, cheeses, tiramisus, seafood, cannoli... I reccomend to anyone, if u dont know what country to visit, visit italy. The people are welcoming, you will eat better than ever, you will see old lively cities, good transport,... Let me tell you that is heaven made out of cream, we been making gelato for decates, The "gelateria" (place where they only make gelato in Italy) where I live been there since the 70s-80s, the owner's death but his grandkids are now in charge and they dilecided to didn't change anything so everything is amazing since the 80s😍... (I also live in a small town so I'm basically a regular and well known by the employees😊❤️)
Yep, the best thing you can do to find the authentic ones, is to ask locals. They'll surely help you out because most of us know our areas very well and we'll recommend you our absolute favorite gelateria. The sketchy gelato shops are usually as the person above me said, turist traps amd most of them sell commercialized gelato, or sell many types of sweets, therefore they're probably not specialized in gelato. At least in my city, pasticcerie sell amazing gelato.

I think this point got lost in translation. But! The amount of aeration is also a reason why Gelato’s tastes are far more pronounced Think like a soufflé. A ton of air is added into the mix. Which drastically affects the taste as well as texture
Most American Icecreams don't use egg anymore. Only the most premium French style frozen custards and a few brands/restaurants make icecream with a custard. It's expensive to do it that way. In America Philidelphia style is icecream is most popular. It does use more cream yes but it also either uses milk powder or evaporated milk to up the protien content. Which gives a faster churn icecream that is shelf stable and is very good for making soft serve which is the favorite in restaurants. This is not a debate about Gelato. Gelato is great, I've got a great Gelato place in my city but American Icecreams usually don't contain egg.
+ gelato is usually sold in "gelaterie" which are places where they only sell gelato and usually they make it by themselves by hand
