      Thanks brotha, its the chile spice along with some other dry herbs I put in my rub to make it a great color. Plus the salt dries out that skin really good. I could eat this chicken without the BBQ sauce. It is just that good, that seasoning has been in the works for over 13 years. I hope you had a great weekend brotha!

      After the chicken reached the target temperature of 175 degrees, wouldn't keeping the chicken on the grill another 10-15 minutes overcook and dry out the leg quarters? Just asking to clear up the question I had.

    Can never go wrong with Sweet Baby Ray's. Good stuff man. Chicken looked awesome. Get you an pan and put water in it if you want any kinda meat you cook to be moist. Put it over coals. It really helps.

      Chicken quarters usually comes out juicy with out water. Water definitely helps out on some meats, plus cooks a bit better on the skin. I prefer hot and fast with chicken, makes that skin crispy. Thabk you Jeff, hope you have a great week.

      I haven't done a video, but have plenty of times. 250 to 275, let it get some solid cook time, roughly about an hour. Chicken breast I pull it exactly at 165 on the thickest part of the breast.

    I prefer to make up my own rubs and seasonings too. I have several cook books with recipes for rubs and marinades. I rarely follow the recipe exactly. I think of the recipes as just a basic outline for me to embellish with the details. Chicken looked good!

      Ya perfect example Big Lew, recipes to me is just a base. I tweak them all the time and work from there. When you develop uncommon flavors to a traditional dish, its a great experiment. Results are great and you get some good food. Thank you Lew!
