How we Cambodian prepare rice is to wash it about 3 times or until the water is clear to get rid of starch milky water. This method is clean and healthy.
Risotto you do not wash otherwise you release the starch. Remember she said liquid can not exceed the rice otherwise you do not get the creaminess. Remember true authentic risotto is not a healthy dish perse

I have a question, do you rinse the rice?? can you do that with arborio or carnaroli rices as their ment for risottos? I have to do this for my son for his birthday

Lidia says to cook the shrimp separately then mix once risotto is ready to serve or don’t mix and place shrimp next to the risotto
