- Crab Stuffed Mushrooms
We used baby portobello mushrooms.
We used the stems from the mushrooms as part of our stuffing mixture. We also added:
1 cup diced onions
1/2 cup chopped parsley
3/4 cup grated swiss cheese
1/2 cup panko breading
8 oz lump crab meat
Saute the onion, mushroom stems and parsley and cool.
Add crab, cheese and panko
Season with salt, pepper and old bay seasoning
Top with grated parmesan cheese
Bake at 350 degrees for 20 minutes on the top rack of the oven.

Instead of Old Bay, I use Louisiana Crawfish boil to season the crab because it brings out the sweetness of crab meat.

Crab (Alaskan sea crab) is by far my favorite food. I used to make these stuffed mushrooms when I worked in a Cajun seafood restaurant in Austin. Never had anything as close I will be making these.

Hello, just seen this video for the first time. I must say it is very close to the one I have been making for years ( I use button mushrooms). I liked the idea of roasting the mushrooms first. The rest of your cooking technique is very similar to mine. And yes they taste great. Well done. Best Regards. hope you get this, the video was made a long time ago.

I prefer to take a small spoon and dig out the “ gills” on the inside. I find that when I compared one with and one without, the mushrooms with the gills were a little bitter.
Thanks for the comment. We have made videos where we have removed the gills as well. Personally, I don’t taste much of a difference. 😊

Question Ive just started teaching myself to cook since I moved out and was wondering if canola oil was substituteable for the olive oil.
Thanks for watching. Canola oil or vegetable oil would both be fine. All you need to do is get those mushrooms in the oil to moisten them up. Have a great day.

Is this something you can permanently freeze then heat up or cook in the oven the day of?
Hello Stacy, I would not freeze the mushrooms, they can get mushy. You can pre make them and hold in the fridge for a couple days though. Thanks for watching. 😀
