Healthy Thai chicken & rice

  • This is one of my favourite recipes, so quick and simple yet packed full of flavour.
    This is my poached Thai chicken with lime infused rice and crunchy vegetables. All of this is done in 15-20 minutes. The broth for the sauce is like richer, fuller tasting green curry.

    The best way to run is to feel light on your feet, so earlier dinners, give your body time to digest your food before heading to bed. And eat watermelon as an electrolyte so that your bodies not running off of salt, this will help with nausea from exhaustion and joint pain. Finally run on dirt terrain (trails) instead of asphalt to train for a marathon to reduce the rate of impact to your joints.

      True, I train everyday and consider myself very fit, I just had my Iliotibial Band on both legs cause me excruciating pain for the last three miles, i was so frustrated 🙁

      Great recommendation for trail running -- much easier on the knees, ankles, and hips. Just may need a different type of shoe/trainer.

      totally, I way prefer grass for running to the impact of concrete or pavements. 👍

    I personally would've cut a little bit more garlic, maybe two whole green chilies without the seeds, lemongrass, galangal/ginger, lime leaves and pureed it to a paste then sautéed it in a wok pan for about 1-2 minutes in the smallest amount of oil you can imagine, maybe one tablespoon worth. And then I would've poured in my coconut milk, heated it up so it boils a little bit then put in the chicken breast and simmered/poached the stew for about 10 minutes like you in this video. Added some sugar snap peas and some baby corn. I would've also added a small amount of sugar, lime juice and lime leaves and fish sauce to finish it off. I think it would be similarly healthy as your thai chicken.

    This is sooo good! Can you please make a Vietnamese Banh Canh Ga soup aswell? I don’t eat pork and it’s also much healthier without pork that’s why I’m interested in the Chicken version. Your meals are always so nice and easy to follow, no matter how difficult the dish ❤️

    If you don’t like coriander/cilantro, just use some parsley. It’s got quite a similar taste and goes really well with any type of curry. I always use it, because it’s quite hard to find coriander where I live. It’s perfect as a substitute!

      Haste's Kitchen I don’t really like it either, but I use a tiny little bit, *very* finely chopped and stir that into my curry. That way I can’t really taste it, but it adds something to the dish ;)

    How long do you cook the rice for? I notice you never use a rice cooker. Can you do a quick video on how you cook rice on a stovetop?😊

    It's all mental! Actually, according to Brits, mental means crazy right? Sorry then. I mean-it's all psychological. Some people are just genetically predisposed to that type of stamina/endurance (note slow vs. fast twitch muscle fibers.)
    I've never done a full marathon, just a half marathon and that was enough. ;o)
    Obviously training and diet are crucial. I find that I don't have enough glycogen reserve to do such long distance running. Even when I carb-load, I still find it depletes a lot of my glycogen stores and electrolytes. I use transdermal magnesium (taking it orally just makes you poo and that defeats the purpose.) Most of us are deficient in magnesium at a cellular level, even if our serum levels are within range. However, you have to be careful when supplementing. It's important to have a balance of electrolytes (ex: mag/calcium/potassium.) It's best to leave this question for the professionals. There's really no secret to completing a full marathon other than proper diet, training and sheer will power.

      Yes I train regularly, I have a good gym in my house which I use daily, I use to run at a decent standard but since hitting m my late thirties and early forties, I’ve struggled massively with both my Iliotibial Bands. They’re cause excruciating pain at around 10-11 miles, it starts in the knees and then transfers to the hips / buttocks. I’m going to start a Iliotibial Band building program to start Enlarging the surrounding muscle groups and do a little bit longer on the run each week. I’m never out of breath so mentally it’s easy for me, it’s just my body that starts to break down. It’s so frustrating as I eat very healthily, and exercise along with it. Hopefully some localised training will help. 👍

      I hear ya. I turned 40 last September. My right iliotibial was awful for about a year. Not sure if it was greater trochanteric bursitis or a strain. I've turned to lower impact cardio with strength training focusing on opposing muscle groups. Taking the time to stretch has helped me tremendously. Unfortunately, time and rest are truly the only things that work.

      totally, i'm back training for the first time since Sunday, I need to start rollering and stretching out for a lot longer pre and post sessions. (I'm so bad at after care and get back to work)

    It looks OK to a Farang, but do understand, I've lived in Thailand for the last 15 years. If you call it Thai anything you'd better be spot on... and you're not. Still love you.

      Lol, they’re new and they were horrifically sharp only last week, I’ll sharpen them up at the butchers tomorrow 👍
