Shopping List:
1.5-2 lbs Red Potatoes (You can also use any potatoes you like)
1/2 stick of butter (more if desired)
150g Boursin Garlic & Herbs Cheese
2 quarts Chicken Stock
1/2 cup Heavy Cream
1 cup Whole Milk
1-2 tsp garlic paste
salt, pepper, onion powder
Directions:
Clean and dry your potatoes and then peel them. (You can leave some skin on for additional flavor and texture if desired). Cut into halves or quarters depending on size - the goal is to ensure all potato pieces are similar in size so that they cook at the same rate. Add to a pot with 1.5-2 quarts of chicken stock (enough to cover the potatoes by an inch) Boil for 8-12 minutes or until fork tender. Warm your butter, milk, and cream mixture together at a gentle simmer. Once the potatoes are tender, strain and add back to your pot. Use your potato masher to begin mashing and then add in the Boursin Cheese. Slowly incorporate your butter and cream mixture until the potatoes reach the consistency you want. For extra smooth potatoes, use a hand mixer or potato ricer. Season to taste. Do not add salt before tasting because the chicken stock and boursin cheese both contain sodium so wait until the end to adjust the seasoning. Garnish with chopped green onion.

I made good mashed potatoes before, but I saw your cheese ingredient, tried it and it was phenomenal. However, looking back at this vid, it seems you added 4oz heavy cream and 4oz whole milk, despite the instructions calling for 4oz and 8oz, respectively. 🤔 I know how to tweak mine, I'm just pointing out for those that may not have tried this before

I made this awesome mashed potatoes recipe for Thanksgiving and everyone raved about it! It's delicious thank you Mr. Make It Happen. For the milk and heavy cream I used 1/2 cup of each as shown in the video and it was plenty for 3 lbs potatoes. Although, the written recipe stated 1 cup milk and 1/2 cup heavy cream!

Hey @ Mr. Make It Happen - I can't really do dairy. The whole milk is a no, I can dabble with the cream if the milk alternative isn't too much. Do you have an alternative recommendation?
You can use chicken stock or try almond milk unsweetened

Wonder is he can make a non dairy mashed potatoes video. A lot of people getting away from dairy at it’s highest times ever in history.
I make mine dairy free. I just substitute the heavy cream for a plant based cream, vegan butter, vegan Parmesan cheese etc. I copy the recipe and just substitute for non-dairy items.

I made your mashed potatoes tonight for dinner and all I can say is DAMN they were delicious! I thought the Boursin cheese was going to be expensive but I got it on sale at Kroger for $3.99. I think that really set the taste off along with the milk and cream. This recipe will definitely be in my dinner rotation!
Made this last night and it was a hit. I didn’t use the chicken broth because I wasn’t sure my kids would like the taste. So I just boiled it in water. I have to say it came out amazing. Looks yummy!! Tip for you. Just boil the potatoes with the skin, once they're done, let them cool to the touch, and you'll be able to peel the skin off in seconds even with your fingers. I'm able to peel a 3lb bag in less than 5 minutes this way. Hope that helps ❤

I noticed you didn’t add all of the mixture when you poured it in the potatoes…do you save the rest? & also Is this enough for two or three people to eat?

Looks good! You know, just peel the potatoes, you don’t have to wash and dry them first. You’re not eating the peels. Peel them, then put em in a bowl of water. Then rinse em off before boiling, easy.
