Jackie chan started in a era when safety was not compulsary and was lackluster compared to the level of safety we take to this day. Tom cruise on the other hand has more safety technology which allowed him to be more daring.
In all honesty I feel like Jackie did it knowing that maybe one of this stunts would kill him while Tom does it knowing that he is safer.
But in all honesty both are great giants its just that there is a gap in technology which left them with different levels of injury.
