You make it so different to me... firstly I add 2 chopped onions to the oil and wait until the are a light brown colour. then I add 2 tomatoes, 10 chopped green chillies, garlic, ginger, turmeric powder, Garam masala and salt. I then leave it on a medium heat and put the lid on until all the ingredients are soft. then I add the chicken and Cook it on a medium heat with the lid on. lastly I garnish it with coriander. when all the water has gone that's when the chicken is ready, so I make sure I stir after 3 minutes to avoid the masala sticking to the pan and burning.
i think its interesting that you added the tomatoes and ginger towards the end, i usually always put them in around the same time as the onions. will also try adding the cinnamon how you did :)

I’ve noticed that when I taste chicken with water in other peoples houses it tastes great but mine is bland. I make the masala absolutely fine at the start but as soon as I add water it just tastes bland
i used to have this problem my self, but i learnt a trick, add boiling water from the kettle, it shouldn't kill the flavour. cold water does. Or if you want, add more extra of the powders and more salt, it will help if you know that you will add water later.

you can take salt out of ur curry with aata ... aata meaning when we are ready to make roti we make a ball so u make the ball nd put it on the side of ur pan in which ur cooking ur curry in ... wait 5mins or you can see some difference that the aata is abit cooked and just taste 😁. this helps me alot even if all my salt goes into the aata cause i leave the aata for tooo long i can still put more in to get the exact taste😊😊😊 try it let me know

Why you add extra tumeric powder? As I know curry powder it's self have tumeric powder on it.
So after you put the coriander in do u leave to simmer for another 20 mins? And is simmer med heat? X
