You should check out Angkor Wat in Cambodia, every square inch of the 400 acre Temple has a carving on it. Speaking of unbelievable. And it's recently thought to be possibly over a million year's old. Peace Now 😊
It's funny isn't it, that with all the weatlh and knowledge we have today, we make buildings and cities that looks like ugly rectangular blocks of concrete or glass, that have to be demolished in half a centry, while some hundred, or a thousand years ago, you built things that lasted (with mantenience of course) and that were incredibly beautiful.
Modern architecture can be really beautiful too. Also there are plenty of old buildings that are very ugly and only extraordinary because they're old. It's not about old vs. new. It's about efficiency vs. beauty.
Today's buildings are based on Budgets and finances. We still have some iconic architects out there. Late Zaha Hadid, Norman Foster etc. Plus it is no longer easy to build such large castle without environmental impact. Trying to build these today would create major issues. It was easy when you were the king and wanted a bigger fancier castle. No one could stop you. No one had to approve budgets and no one to protest environmental impacts

I've been to Mont Saint-Michel several times as a kid and I can just tell you: this place is just unreal. My mind was blown every single time. That said, it is some of the technically less intricate monuments I've seen in France. I can just recommend you to visit the cathedrals of Chartres, Reims, Amiens, Beauvais and Metz. These experiences have changed my life forever. If you have been to northern France and didn't come back being in awe of what people in the middle ages accomplished, something is utterly wrong with you.
I don't think the beauty here is because of the complexities of man-made art and architecture. I think the beauty here is more about the contrast of a single man-made structure painted against the background of pure and empty nature. A single point of something in the infinite nothing. A metaphor for our planet in the vast emptiness of space; a single point of life.
