1:43 who doesn't use a 3 cut method.... this guy. 1st cut go 1/4 diameter 6 or 10 inches from the collar. second cut all the way thru and the final cut removes the 6 to 10 inch from collar.

You are correct, typically with large branches you are suppose to use a 3 cut method. With a branch of this size though, it is very easy to just hold the branch. Who wants to spend more time pruning than necessary.

Good advice on pruning technique, but keep your free hand away from the saw's cutting direction. Saws can slip and give a nasty cut.
