I love my Cafec Deep 27 brewers! They are perfect for microdosing, tasting and comparing more than 5-10 different sample roasts, terroirs, processes and varietals parallely without the urge to waste too many beans (and you can drink it ALL without spittin' out!). It is purely fabulous that even with these small doses (5-10g) the intensity, the depth and saturation of the flavor notes in the final cup are just as condensed and well balanced like brewing a perfect 20g dose cup with a fast Orea bottom for example. Fantastic little gadget... And it serves az an icecream cone holder during the summer!

For those interested in doing larger brews like mentioned at 10:50, Chemex does have the larger sized brewer options. The "8-cup" Chemex is my household daily driver for pour over and a 60 gram dose recipe is pretty much perfect for that size.

From what started as a house warming gift (Nespresso) from a friend in 2012 to attending a barista course to learn how to properly do cappuccino's. I learnt and loved espresso from my lessons and ended up with a Eureka Atom 65 grinder and Rancilio Silvia Pro X. Here we are in 2024 with a Kinu M47, V60 brewer, watching Lance Hedrick after a 3rd cup and couldn't be happier. Thank you for the buzztainment.

Happy Holidays to you too! Thought I would respond for the first time, I've been watching your content for just under 2 yrs. now, I have utilized alot of your methodology with very positive results. Interestingly, the 2 methods that have improved my espresso the most was: firstly, spending more on the grinder. This improved my results more than anything else, at least until recently. For a little background I am working with a fairly small budget so I went manual (J Ultra) and the improvement was immediate and significant. The second method you suggested was slow feeding/grinding. Unfortunately, this isn't really practical with a manual grinder. That said, I have tired of the manual life (maybe I am a bit lazy) so when you resently reviewed the Flair Power Tower I impulsively ordered it. I know you were only moderately impressed with it but I decided I could look past the shortcomings (noise and hopper system) because like I said earlier, I'm lazy! My only thought was that it would improve the flow, it would be a time/labor saver. I didn't give any thought to slow feeding until a couple days ago. Suffice it to say I can't go back. What a huge difference! It looks like my flow just got longer again but at least my coffee has jumped to a whole new level! Thanks for all your insights. Level up!!

And then let an "average" person try the test as well. I'd love to see how big the differences are.

Hello Lance, I know you're not really into heavily processed coffees but for me they've been a way to get an interesting light roast experience on a cheap espresso focused grinder. I even managed to get a drying sensation with no bitternes on a Switch (15g, 200ml, immersed cold bloom and a single 85 C° percolation pour). Clarity is not a possibility, sure, but the sweetness and juiciness without any bitterness were pretty amazing considering the equipment used. Trendiness and terroir overshadowing aside, such coffees seem to be a little bit of a blessing for people with cheaper gear.

As a coffee geek, the one item I don’t see in these videos is coffee DRINKING temperature. When tasting any liquid; wine, whiskey, tequila, etc. the drink temperature makes a serious difference. But nowhere as much as coffee since it starts so hot. I use an Ember and always pour, wait until 139F, then drink. The coffee you drink straight out of the brew (hot) always, always, always tastes different as it cools. So that spot-on pour over drinks as too hot, too hot, getting there, good, really good, too cold, way too cold. We always see influencers brew, pour, and taste immediately and start commenting. I wince… Why do coffee people put up with that? It’s so easy to do the temperature/taste experiment! I even take my Ember to our local coffee shops to try their new stuff because, well, I like coffee too much to have half (front and back sips) a nice cup have substandard taste simply due to temperature. Cold brew is an exception but as a taste nerd I avoid it because, well, it’s too cold to taste properly. As in tasting beer. Cold beer? Not my thing because I prefer to actually taste it, not have its taste be dampened by the cold. I guess with crap beer or crap coffee, cold is OK because it hides the, well, crap. ANYWAY, sure, brewing water temp matters. But drinking temperature matters more. Much more. Just my two cents! ☮️ Oh, just one more cent…LanceH is one of my three go-to coffee people here on YT!

For larger batches, I find that immersion method beats pourovers. For a 35g dose, I really like Clever a lot better than V60 or Kalita. I can just barely eke out a 35/500 from the clever, coffee for two no fuss.
