It’s been a few weeks since I’ve done a full week of meals on a very small budget! If you’d like to see another one of these videos soon, let me know I’m happy to have another up and edited in two weeks!
Bring it on okay..I'm watching with much excitement and making menus for early spring. 💐💐🌱🌱🌟🌟
@@diedrerettig-hill2104 I’m so glad you’re getting good ideas!
Just love all your videos! They have been so helpful. Would you be able to do one concentrating on what to top off potatoes with? Sometimes we get stuck scrambling for toppings and haven’t planned out a whole meal. Thanks
@@jeanvillagio7210 I love this idea! Let me put together some ideas ❤️
love these ideas Miranda - OMG congratulations on meeting your debt free target. Huge achievement - onwards and upwards for you both!!
Thank you!
Congrats on being Debt Free! I am soooo close to being debt free (with only mortgage remaining) so I feel ya. Love your extreme budget videos.
Way to go!!! That’s amazing!
Your videos are an explosion of ideas, I actually freeze up and can't decide what to make, for a single person, I tried an extreme budget meal week and I could not even finish the food in one week I had to throw some out, the food is very filling to me, almost kind of disturbs me how much money I can save (unless I'm buying expensive fruits and berries) following these EXTREMELY FILLING budget meal plans.
You can always cut back a bit and save even more!
Awesome video! I go to a co-op and get an entire cart full of fresh produce for $10-$20. It’s a game changer since we are trying to save to buy a home and get out of debt.
Oh that’s amazing!!! What a great buy!
Way to go on being debt free!! Such a great accomplishment!
Thank you!
Something you can do is “massage” the dressing into the kale... literally put the dressing over the kale and then use your hands to massage it. It allows you to still eat it raw but it helps to break down some of the rough fibers, making it more enjoyable to eat. You can also massage kale dry, or without any dressing. Your hubby might enjoy it that way.
Someone else suggested this too I may have to try it next time! It sounds like this is what they must do when I get a kale salad at a resturant!
As always so envious of your cost of groceries! Even aldi is more! Great vid today!
We really are very blessed by the prices here! I always thought before we moved here certain prices of things like groceries and essentials would cost more since it’s all brought in, and we basically live in the middle of nowhere but that’s not the case. It seems there’s low competition so low costs of living overall!
These are my favorite videos! What a great job finding healthy ingredients for low budgets. Love the sweet potato casserole topping idea!!
Thank you so much! I’m glad you enjoy them!
Great Congratulations!!,🎊🎉🥰🥰🥰🥰🥰🥳🥳🥳🥳
We are super happy for you and very proud of you!!!👏👏👌🥰🥰🥰

Congratulations!!! Best of luck saving for your first home!!!
Thank you!
Hi MiRanda, I love your Shepherd's Pie with sweet potatoes and your other recipes! You are so creative and I appreciate your cooking without oil :-)
Thank you! That’s so kind! Honestly oil is just a huge waste- it’s added cost and you can’t even taste it plus recipes are so much healthier without it! I’m glad you’re an oil free cooker too!!
CONGRATS!!! that is awesome 😃
Thank you!! 😁
So many Congratulations Miranda !!!! I can’t wait to see you reach your new goals too !
Thank you! That’s so kind of you ❤️I’m excited to continue to share our journey!

Congratulations on becoming debt free 🎉🎉🎉 love your grocery haul videos, some great ideas thanks for sharing 💞
Thanks so much! 😊
Congrats on being debt free! And thanks for sharing the prices:)
You’re welcome! I know everyone has their own prices based on where they live / shop but I thought it might be helpful or even just for anyone curious!
Thank you for these recipes. I am new with plant base and these recipes are sure going to help.
So proud of both you working as a team
Thank you!
These look great Miranda! I really want to try that avo dressing!!
You should! Its so easy and would go well with so many different meals!
Congratulations!!!! 🎉🎉🎉🎉
Thank you so much 😀
I like the avocado dressing for the pasta salad you made. I almost always put chopped avocado in mine because of the healthy fat and fiber but I never thought to put it in the dressing. Game changer!
I can't eat a lot of avocado but a little here and there so I wanted to try something new! My husband loves avocado and this worked out really well!
Ooh chocolate hummus sounds yummy. Going to add some defatted peanut butter powder too when I make it. Thanks for the great recipe ideas!!
Hope you enjoy!
Yay! Congratulations on becoming debt free 👏
Thank you!!
In England you can buy mesh bags super cheap so that when you buy loose fruit veg and grains you put them in your own bags so that you don't use plastic. Wash and reuse. You should definitely check it out especially as you promote frugality and I hope looking after the planet. Even if you can't get these bags easily just don't use plastic bags x
I already own them unfortunately because of this pandemic we aren’t allowed to use them at our local stores they have signs up in the bulk and produce areas to only use their store bags to keep things more sanitary.
And just as a reminder since I’ve said this in countless videos and I guess will have to continue to say it Incase anyone is new, I reuse the plastic bags to clean up after my dogs ❤️ they aren’t going to waste ever I reuse reduce recycle as much as I can!
Thank you! I always feel I need to justify because it seems I get comments often that tend to be a bit judgmental as to why I don’t use reusable bags and I try to be patient with those who ask because I know each country and state has different rules and mandates right now!
congratulations on paying off ur debt.. so amazing..💕💕
Thank you so much 😀
Your meals looked so good. Congrats on been Debt free. I'm sure that wasn't easy. :)
Huge congratulations! Great job!
Thanks so much!
Love the content and congratulations on becoming debt free and pushing so hard to smash your goal. You continue to be a positive inspiration. Thanks Miranda 💜
Everything looked delicious. I love how you do these videos. You come up with such great ideas. Looking forward to trying these.
Thanks so much! 😊
So proud of you in becoming debt free. It is something I hope to accomplish because it's hard having it for sure. ❤️
You absolutely can! Just keep working towards paying it off! Each step forward is a success❤️
Congratulations!!
Thank you!
I love cavatappi noodles. They're my favorite.
I have to agree they’re my fav too!
congratulations on becoming debt-free!!! I am so proud for you 2!!!
Thank you!!
CONGRATS!!!!!!
Thank you!
Uncooked kale!? 😱👍🏻🤯🤩 that salad looks great! Cute pasta bouncing in lol. I ♥️♥️♥️ your videos & your creativity & info!! Keep it up girl!
Yes! I get this kale salad from a little restaurant here and I love it and wanted to include more kale recipes but I know some times it can be a touch hard on people’s tummy’s!
How long do you cook your apples for in the crockpot?
I recently found your page and am in awe of what you achieved!! I’m so impressed! 100% trying your recipes !! Congratulations on being debt free also!! Rockstar 🤩
Usually about and hour and a half, but cook them until they are soft to your liking!
@@flourishingmiranda Thank you... I'm sharing your page with all my healthy homies :) haha
If you haven’t tried yet, massage the kale before putting it together. My husband will eat kale if it’s massaged...which is good since I planted 6 kale plants outside and they are overproducers 🤣
Does massaging it make it more tender? I laughed at your “my husband will I eat kale if it’s massaged” hahaha I’ll have to give that a try!
@@flourishingmiranda way more tender! I’ve seen others massage the dressing into the kale but that’s too messy for me. I will just give it a few squeezes on the cutting board. Thanks for the great ideas in all your videos!
Thanks!
OH my goodness!!!!!!!!! YUMMY
It was!
Awesome job!! It will be exciting to see the next part of your journey. I love all your simple food ideas.
Thank you!! I’m excited to keep sharing!
Great snacks! That avocado dressing! All of it, YUM! -Nix-
Thank you!
Major kudos for reaching your debt free status!!! 👏🏾👏🏾👏🏾 I'm in the process as well and boy I can't wait to say those words as well 🖤
Thank you!! And you got this-- one foot in front of the other! If we can do this anyone can!
Whooo hooo!!! Congats on paying off the debt, thats awesome!!! Yummy foods there, inspiring! TFS
Thank you!! ❤️
Congratulations on becoming debt-free! 🎉🎉🎉 That's amazing you were able to do it so quickly. Can I assume we'll be seeing some house huntings videos in the future? 😄
Yes ma’am you’ll probably be seeing some home things in the future
☺️☺️☺️
Congrats on accomplishing your debt-free goal!
Thank you!
Wow!! Congratulations on being debt-free!
Thank you!!
That chocolate hummus sounds amazing. I'm going to make some this week. That pasta salad looks really good too. Gluten free pasta is a little more expensive but totally worth it sometimes. Every recipe looks like a winner here. I love both lentils and split peas. I can't do a lot of white potatoes so the shepherds pie with sweet potatoes is something that I will definitely be trying.
Thank you Michelle!! For us and for viewers I tried to switch things up a bit and get more creative! Sometimes I need everyone’s comments and feedbacks to push my creativity a bit!
Congratulations 🎊 🎉 🎊 🎉! That's amazing! 💗
Thank you so much 😀
I just love this video!! Thank you for all the great ideas😊 I had a lentil sloppy joe flop last night and your last dish with potatoes inspired me to do something similar with my lentil mash for lunch today (I over cooked them 🤷♀️) congrats for reaching your goal too 🙌 I’m so happy for you 😊
Oh that’s a great idea to use lentils! Honestly I’ve over cooked them before too but just adding them to something you’ll never notice!
Great haul - keep it up! Love what you made this week!
Thanks so much! 😊
Great video and would always be happy to see another like this.
I’ve seen the oatmeal cookies usually done with banana, and I’ve seen with pumpkin or sweet potato - but this is the first time with apples. I don’t have a food processor but it makes me wonder if I could do cookies with whole oats, applesauce and maple syrup.
Yes you an use applesauce!
I got so excited to make the apple cookies because I knew I had everything! Well it turns out my mom had a stash of coffee in the oatmeal container 🙃 its ok though not a hard thing to find
Congratulations on the debt free goal!!!🥳
Nooooo 😂this probably shouldn’t make me laugh but it did! You’ll make them soon enough! And I hope when you do you enjoy them
@@flourishingmiranda oh its funny especially if you know my mom haha
Congratulations on the debt paying off! 2020 was a huge year for me in terms of knocking out some of my student loan debt, and it feels good 🙌🏼 I have some apples to use up so I’m going to make some crock pot apples today! Such a great idea, especially as it’s still pretty chilly in the Chicagoland area.
I’m so glad for you too!!! 2020 helped us realize that with things closed and not much going on we could take the opportunity to really push and I’m glad we did and I bet you are as well because as you know it feels a huge weight has been lifted!
Oh my goodness! That chocolate hummus is amazing 👏 I just made it
Ahhh I’m so happy you made it!!! It’s such a good snack!
I love split peas. My three year old begs for split pea soup.
Awww that’s so precious!
I'm in Nevada too! ❤️ But I am in the Reno/Tahoe area. Everything looks great, gonna try it all 👍
It's beautiful up where you are!
Congratulations on paying off your debt!
Thank you!!
The sweet potato shepherd pie looks really good 😋
It is!
In Ontario Canada this would have cot over $50 I wish we had better prices here
Yes, prices vary even here state to state
Congratulations! Such an inspiration!
Thank you so much!
Congratulations!
Thank you!
❤️
:)
Have you tried the high carb Hannah corn chowder recipe yet? So delicious and would love to see a simpler adaptation of it!
No I’ve never made it!
You might want to mention that you have to pay cash or debit card at Winco, no credit cards accepted.
Oh I guess I never considered that since it’s not how I pay! But good point for anyone who pays with CC for their normal errands!
Congrats on getting debt free!!
Thank you!
I wound love to make that pie for my mom. She can’t have tomatoes. Can you think of a substitute suggestion I can use? Also could you type out all of the ingredients as well as how and high and how long you bakes it?
Can she eat butternut squash? We’ve used that before in place of tomatoes but we also did it with regular potatoes that time!
Rough estimates for ingredients:
-2 large sweets mashed
-1 cup spilt peas cooked
-2 medium onion sautéed
-1 head of kale chopped
*I cooked all my ingredients minus my sweet potatoes in a large pot until tender with a touch of sea salt. Added to a baking dish topped with mashed sweet potatoes and baked at 450 for 25-30 minutes
Hi! I live far from a Winco in Cali but would make the trip out if bulk bins are open (if anyone knows if they are open in Cali)
Hopefully someone will let you know otherwise it’s worth calling and checking!
@@flourishingmiranda that’s a great idea!
