    I cooked this for my wife it was really good. Try using a pair of tongues to flip the spinach it goes faster and makes it a lot easier and less messy . Thanks for recommending the cheese I hadn't thought of that it was a nice treat

    Wonderful video. Thank you. I have been making spinach like this for years. I maybe use a little less garlic and add some hot chilly. Love it so much. This dish goes so well mixed with basmati rice or potatoes or like side dish for a steak. It's absolutely wonderful even when it is cold and can thus be a delicious additional ingredient for your egg sandwich:)

    Can't tell you how many times I've burned the garlic! I do something similar with broccoli rabe and this reminds me to do it with spinach as well. I always enjoy seeing how a 'real' person cooks; I like seeing all the details. I think, oh, I've been doing it this way all these years and I could be doing it THAT way :-))

      Hi, you would have to thaw the frozen spinach first and then add to the garlic and olive oil otherwise you may have too much water but you can try it by adding the frozen spinach right to the garlic and oil and see how you like it.

    Couldn't agree more with washing your "pre-washed" packaged salad mixes. I always wash mine and frequently get dirt and sand and even small insects off them. YUCK!

I can't tell you how many people I see using it right out of the bag, including restaurants, and considering that they are constantly recalling these bagged lettuces for E. Coli, I think it's so important to rinse them. I stopped going to my favorite restaurant because I saw the food preparer just open a bag of romaine and chop it into a bowl.

    Dear lady, thank you very much for sharing your interpretation of this simple and delightful peasant dish. I note with approval your choice of some ingredients …cold first pressed extra virgin olive oil and what looks like Hardneck/Rocambole garlic (IMHO the best garlic choice) and the generous amounts you used of each. The results look delicious, but please allow me to pass on some tips on how to greatly improve upon it:
    Never place wet spinach leaves in heated oil as it will cause the oil to splatter making a mess and also burning the cook. There is also another problem with sautéing wet spinach. The result will be watery par-boiled/par/sautéed spinach. What you turned out contained upwards to about one third cup of water. This is far from ideal. The desired result is to have all spinach which has been lightly sautéed in garlic infused extra virgin olive oil and no water. Washing 3x’s pre-washed spinach is completely unnecessary, but if you must do so dry it thoroughly in a salad spinner before sautéing it.
    Also, garlic should be browned to a golden hue to release its entire flavor. You must be very careful in doing this though because it can go from golden brown to burnt in a flash… and burnt garlic is nasty. This can be accomplished through practice, but there is a simple hack taught to me by my Sicilian mother, guaranteed to produce professional results the first time it’s used. Place the dry spinach in a suitable sized sauté pan and set it aside. Brown the garlic in the extra virgin olive oil in a separate 7- 8” skillet on medium low heat. Do not chop or use a garlic press, as this bruises the garlic releasing internal fluids making it more susceptible to burning. Instead, brown the cloves whole turning them over frequently with a wooden spoon to insure they are all evenly browned. There is a UA-cam video on making garlic infused oil that shows the desired golden brown hue. Remove the browned garlic which should be soft and place it on a dish at room temperature to stop it from browning further. Pour all the oil which is now richly garlic infused over the spinach and return it to the heat. After the spinach is sautéed chop the garlic and mix it in. Mastering a technique of properly browning garlic to its full flavor is a key component to preparing any Italian dish.
    Finally, life is far too short to eat any brand of Parmesan cheese. Go for the real deal instead… imported Parmigiano Reggiano or at least imported Locatelli Pecorino Romano…you won’t be sorry if you did, and you’d never eat Parmesan again! My favorite way of serving spinach aglia e oliva olio is over pasta. Tonight I had it over al dente fettucine, which is why I watched your video. I went all out with the cheeses and used shredded Parmigiana Reggiano and grated Locatelli Pecorino Romano; the former for the taste and the latter for its salty sharpness. The salt content of the cheeses is the only added salt I use. I also toped it with some crushed Italian red pepper for heat.
