Shaw was already infected. She got the infection from her husband David infected, and then they had the alien baby together. Shaw's infection was slow but unstoppable progression. Perhaps David put her out of her misery. Maybe the infection was fatal or transformed her to the degree that her personality was destroyed. David extracted her infected eggs for his experiments. The writers were obviously conflicted about how to develop it. The story line that was preserved is that David cared about her and did not want her to suffer simply because he liked torture. In part her death severed his connection to humanity and her eggs were 'her children' and as an android he considered the more evolved creatures to be a worthy legacy. From there, all humans were 'blessed' by his gift into giving them a legacy of higher evolution.
