You've missed out two points: 1. In GTA VC NPCs also react to the gun being pointed at them but not with free aim only lock on. 2. In GTA SA NPCs will also react to you driving or standing next to your expensive car and comment differently to CJ depending on his shape and what his wearing. Other than that cool video.
In GTA SA npcs freak out when CJ follow them for a while, also they react when they get pushed and react to expensive cars. And if I'm not wrong we can interact with them when they talk to us, answering in a good or bad way.
I don't know if you knew it but in gta IV the NPCs can even react by getting out of the car and worrying about you if you have been run over by that driver

For example while raining on occasions, some NPCs will help you by umbrella, begger and homeless will also rarely ask you for money or cops will actually put their hands through broken window to unlock a locked vehicle. I could be inaccurate cause it's a while since I played the game but the details are there.
Actually for GTA IV I once encountered a situation where I hit a female NPC and two random dudes showed up to beat Niko up Which is impressive and sad at the same time Also when you damage an NPC car via melee weapon the driver sometimes will beat Niko up for damaging the car. And it's also possible to make attackers take flight upon calling 911 1.
Gta San mobile Cleo version NPCS react more just checkout Arshi678 Cleo modes for San Android at Gtainside. There a cleo csa mode where npcs start watching u if any weapon in ur hand even it's for Android San alot more mods for Android those make gta San Alive more again with Cleo on mobile.
Gta sa npc have also supercar recention if you riding a super car people will stop walking and watch for afew seconds! And also had pushing recention Is you push them they will say Hay dont push me or get out of my way. If you puah them too mush they will run away or try to fight you and also if you bumping into their cars they will try to fight you or get mad And also recention to cj body type and clothes , respect level and you can even reply their recention Their are a lot of thing we cant even find in gta sa!
