So cool
For the non chemistry inclined folks. Shrimp are power food. Once the “shell” is removed it’s almost 100% protein. Cooking any meat, be it shrimp or steak, is simply just “denaturing” the protein. Acid does the EXACT same thing as cooking. In terms of breaking up the protein (cooking it). The difference is, the acid from citrus works because it breaks the peptide bonds that hold the amino acids that form the protein. So no heat needed. That’s why you often hear folks like kelly or chefs on TV use citrus in ceviche. It denatures the protein, and thus “cooks” it. Same reason you’ll almost always have a form of vinaigrette with beef tar tar or many other forms of eating raw meat. In that case the vinegar provides the acidity. Pretty fun stuff! Great vid!
While not much of an issue in Florida, citric acid does not kill parasites in seafood muscle. While humans are not the natural host, some marine and aquatic parasites can cause illness in humans. Sunliner Vet There are A LOT of marine parasites that can make us sick. And yes, using a light acid will not kill them. There are so many examples I won’t even bother to name another. My point was just explaining why when you add citrus to meat you notice it change color and look “cooked”. It’s just the reaction with the protein in the meat I was explaining.

Used to make use of my two cast nets, one 4 ft. And one 6 ft. in the 80's when we lived next to the waterway, Great fun and delicious shrimp, ate one raw in the river once because the creek leading up to our dock was tidal and went dry at low tide because none of the residents wanted to chip in the money to dredge it out. Got stuck out there in the river at low tide and was starving and they looked soo good.

He was writing a phonetic version of the name of the springs. www.floridastateparks.org/parks-and-trails/ichetucknee-springs-state-park. The large spring run empties into the Santa Fe River, the largest tributary of the Suwanee. The park is about 35 miles north of Gainesville.

I miss good shrimp. You and Gabe, among others of your ilk that I frequently watch, are so blessed to have the ability to fetch your own fresh seafood. My girl hates shrimp. I literally chased her around the kitchen with a shrimp in my hand 4 years ago. Never bothered with it since. I know this is an old video but that's how far behind I am but keep up the great work.

Kelly, I don’t know what Gabe is telling you but I live on the Saint johns river in Jacksonville, Florida. Don’t eat raw shrimp out of the St. Johns River!!! The St. Johns is a dirty river with an algae bloom all during the summer. At least cook it! Just looking out for you kiddo.
By the way, when is the wedding? U2 seem to be getting along nicely. I have high hopes for both of you!!!
Matt Eagle Whatever brother. I’ve lived here for 56 years and I’ll never eat anything out of that river unless it’s up by Mayport where the river meets the ocean. Do what you want, I just don’t recommend it.
