Restaurants probably could be one of the biggest sources of food waste, but only cause guests don’t eat there ordered food. In nearly every kitchen you try to use as much as possible. For example cut offs when you cut brunoise … the leftovers are used to make a stock eg. It’s that skill to not throw leftovers away, because you know what you can use it for, what makes a chef a chef…
