      weird title caption.
      salted ham is a thing in many cultures.
      it makes sense to preserve meat with salt and lard if you don't have a fridge and this would've been the case for everyone back in the day.

    Hi Amy, as a Dutch living almost 19 years in Dali county, Nodeng is my favorite village. I don't want to live there but we visit it regularly with our guests and they enjoy the place very much. So beautiful and quiet.. Salt, ham, no traffic only mules and horses, the people, the houses. Sunny and Gerard

      @@Athrunwong I'd say the westerners would love it. Its taste is a combinition with balanced savory and umami, the texture is like anyother kind of dried meat. And it also come with some extreme attractive fatty fagrence which feels almost like butter. Nothing strange, nothing out of the box, just pure pleasure tasting it.

      The quality of her production certainly rivals anything you'd see on the Food or Travel networks--she has charisma, journalistic talent and a knack for drawing viewers in. Which is harder than it looks, because of course the subject is food and viewers cannot taste what she is eating. Nonetheless, she manages to garner hundreds of thousands of views per video. But given how she portrays the host country--in neutral terms--it'd be an uphill battle getting a nod from a Western network.

    As a chinese person who grew up abroad this series has genuinely been SO fascinating and informative. I bet most people would be shocked to see this side of china as well. Also LOVE alice she's so knowledgeable and has such a calm, elegant aura about her!! Would love to see her do more videos with Amy ❤

    Don't feel too bad for the mules--they are super strong and that weight is nothing for them! Plus, the mules I saw in this video looked very well cared for. I imagine if people are so reliant upon them for their lifestyles, they take excellent care of them! Mules are used in rocky terrain all around the world. People use mules specifically because they are more surefooted, hardy, and stronger (both in body and hooves) than donkeys and horses. I love them!!! Also--great video as always :)

      The surefootedness of a donkey, the kindness or willingness to please of a horse and stronger than both. Bigger mules can be wonderful endurance riding companions too. Not only as a pack animal, but also ridden. Wonderful animals! Sadly sterile so they can't be bred into working animal lines.

    Why would anyone be surprised that China has aged and preserved ham (Prosciutto) because it has 5,000 years of history and civilization! The tremendous variety of Chinese food in every region of China attests to the creativity of how Chinese have been using and preserving their food sources.

    I’d agree with Alice, the same way grass fed beef tastes different to grain fed. The same species of fish such as bream will taste different depending on what it’s been feeding on.

    I went there in April. It was a lovely place. I'm surprised that you were not affected by the altitude as you walk up the village. I had to use my little oxygen can. Anyway, as I couldn't bring back some of those tasty ham; I ended up buying Pu Erh tea, coffee beans, mountain salt, and local pastry pies (with rose jam or cheese fillings) as souvenirs.
    Just remember to declare them when you come back. The customs will take a look, then let you through as long as they are vacuum packed / sealed.

    I grew up going to Jinhua in Zhejiang province as a kid to buy a leg of ham with my family. The city is known for its ham. It’s never occurred to me that ham isn’t considered Chinese until I started living in the west. Although I will say I generally find Chinese ham a bit sweeter than Italian or Spanish varieties. Great series and would love to see more collabs!

    That salt tea is basically warm electrolytes. If you have anything in excess, you'll die. Even ginseng can kill you. This explains why everything should be balanced, Yin Yang... basic ancient Chinese philosophy ❤

      @@老肩巨滑-z9j 你想想人家這種手工製造出來的鹽巴都是少量生產,根本沒辦法跟機器製造,工廠規模製造出來的鹽競爭。那些鹽成本可以很低,結果生產的鹽也可以很便宜。用薄利多銷營銷方法。人工製造鹽巴如果賣同樣價格就根本沒錢賺,甚至虧本,沒錢賺沒人願意做這一行,結果這種製鹽方法就會失傳。

    Great video ! Regarding salt and health, the balance is not about how much salt, but the ratio of potassium to sodium, where sodium is the salt; the potassium comes mainly from vegetable sources. Only people who eat a poor version o the Western diet - high in salt AND also low in vegetables - are at possible risk from high salt, because the potassium to sodium balance (ideally about 2 to 1) will be off. If one eats healthy fresh food, it is not an issue.

    Salt is not higly processed, the iodine is needed to avoid certain deficiencies, some other things might be added to avoid caking. Fleur de Sel is expensive because it forms in caves and has more moisture and things like calcium in it! Not because its better salt, its just hard to harvest.
    The video was super cool, I just got a bit ticked by the salt 😅

      Hmm yes, sodium aluminosilicate or magnesium carbonate is super tasty in your regular, highly processed table salt that’s typically 97-99% salt. Wonder what the stuff are. 😂

    "Pack mule" is a common saying in who knows how many different cultures, but man does it hit different when you finally see one. I'm glad you two gave him something to eat.
    Alice is such a good guest. I also appreciate a lot of the background you provide about the food on display. Fantastic vid as always.

    Totally fascinating how east/west cultures find a common way to do things despite isolation from each other. All that ham, but where were the pigs??!!
