Grind size reduction to about a third of that size will yield a far better extraction. Your coffee will likely be under extracted at that French press size.
Grind for longer shaking regularly. I take about 20s for 30g of beans.
Sieve into a bowl and regrind beans that don’t pass through.
      Repeat.
Beginning to end of extraction will be about 1.5 minutes. Assuming your temperature is about medium.
I love moka pot too, when I’ve no access to a espresso machine. 😋

      1. Don't use cold water but rather hot water but not to the point of boiling like this guy did
      2. Don't tamper the coffee that could mess with the extraction just try to distribute it
3 you don't want the coffee to come out splattering like in the video and you don't wanna leave it too long doing that gurgling sound
      4. After you hear it starts to make the gurgling sound you want to quickly cool down the base of the pot like in the video

@@warwickbond8836 No your wrong his whole technique is bad. I garuantee I've made more mocha pots than words in this comments section. You want to slow and control the brew flow, the second you use too much heat the water gushes through the puk and your not extracting. Just leaving it on the stove like this vid is a god awful way to brew with mocha pot. You have to focus and constantly either put it over the heat or take it off to control the pressure and flow. Most people don't know this, most Italians don't know how to properly brew mocha.

As I said, he made a video specifically on that content to show people good technique and how to get more out of a cheap blade grinder. To his credit, he caters for all manner of people with vastly different budgets. All I'm saying, is that he couldn't care less if people want to make up their own process. Clearly there's enough negative criticism here to demonstrate that. I too thought it looked dreadful
As you probably know, there's a whole swath of people with big budget coffee machines that couldn't pull a decent shot to save their lives. And then a heap of others pontificating nonsense about how to brew better. Like the other day one in my feed showing someone blooming their coffee before doing a moka pot! GTFO!

  • @FrancescoDeo_
    @FrancescoDeo_ Місяць тому +4

Preheating the water is inconvenient. Since the water is already hot, the time the coffee has to extract from the grounds will be reduced. This can slightly affect the flavor and strength of the coffee, potentially making it less aromatic or more bitter if the extraction is too quick. Based on the video’s result, an Italian would say "è acqua acqua" or "è acqua sporca" (meaning it’s just water or it's dirty water).
Cooling the lower part of the moka pot is entirely unnecessary unless you plan to unscrew it immediately.

No, no, no. Here's how to get perfect coffee every time:
    1) Grind the coffee to medium-fine. Bialetti says medium-fine is the correct grind for the moka pot.
    2) Do not fill it with boiling water! Bialetti says to use cold water, but you can use room temperature water.
    3) Fill with medium-fine coffee, but don't press it down.
    4) Set the moka pot on LOW heat and leave the lid CLOSED!
    5) The coffee will quietly seep into the upper chamber with the lid closed.
    6) As soon as you hear a gurgling noise, turn off the gas heat or remove the pot from your electric stove. But do NOT cool off the pot with water!
    7) Let the pot rest for a minute to finish filling.
    8) Open the lid and stir the coffee.
    9) Immediately pour into your cup or your glass of hot milk.

      You are completely wrong.
      1. You can and should use boiling water. Once the pot starts brewing move the pot almost fully off the burner to maintain the heat but not heat it up more.
      2. You should cool off the pot with water as soon as you hear the bubbling sound come from the spout. This stops the brew process and prevents bad flavors from coming into the coffee.
Also you can leave the top open when it’s brewing. I do this to see when it starts to bubble.

Starting with boiling water in the bottom is the best way to brew with it. this is a different technique that is not used in Italy because we like a more intense and less acidic aroma, even if the Moka is Italian (not Cuban, not Brazilian, not Dominican, not UK) it can be used in a different, more suitable way to the taste of other cultures. So less roasting, shorter duration on the heat, coarser grinding, sometimes additional paper filters create a coffee that I don't like and which resembles what in Italy we generically call "American". So this is not the Italian method, neither worse nor better, it is not typical but it is different. The way we Italians drink coffee is too intense for many foreigners but they usually get used to it if they stay with us long enough.

The problem I see by heating water first and then pouring the boiling water in the bottom chamber, then putting the moka pot on medium heat, is you don't know *how hot* the water is. So you're likely to over boil the coffee beans; which might come out bitter. And giving how small you're grinding the beans, you can easily heat them and extract the beans-boiling them too high in temperature.

Once you see it's brewing out a little bit, return to back on the burner until coffee comes out and remove. So far, it hasn't been bitter bitter. I tried low heat as low as our stove can go using cold water, medium heat. Bitter. Same with medium-low.
      I don’t know.
It seems as it starts steaming, the steam needs to go somewhere, right? So rises up through the filter where the coffee goes, heating your coffee and that's why the mild bitter taste. And this is assembling everything and using cold water.

My mom grinds coffee in one of these electric coffee grinders, and the coffee tastes awful, especially the way we make coffee in my country, it's a lazy way - just put ground beans into the cup, boiling water and call it a coffee.

Too many things need fixing. And it’s easy. Burr grinder n finer, leave the lid open till you know the temperature that makes the flow steady (not too high, bitter) then keep it closed for future brewing and use you ear to know when it is done (keeps in more of the aroma)
    Get out and live peeps

Good god in heaven above the speed at which the coffee touched the walls of the mocha pot, were you taking it black you’d have a bitter undrinkable mess on your hands. But thankfully you’ve put 20 pounds of whipped cream on top of it. Sheesh.

Experimente espalhar um pouco dessa água quente sobre o toda a superfície do café, antes de fechar a moka. Mas bem pouco, certo? Só uma molhadinha.

I'm Italian, i really thank you for finally finding the way it should be used; we stupid italians invented it, but we use it in a completely different way, it's more than 150 years we are trying to figure out how it works.
    THANK YOU REALLY.
However we can teach an aussie to play didgeridoo, and americans how to use guns improperly.

You can find a lot of info on Google. Essentially, those 3/4 minutes of waiting the water to heat will inevitably heat the ground coffee as well and that will damage the taste of the final cup. I've drank moka every day for years now and you can really tell the difference. Also, heating water in a boiler or in the microwave will save you a lot of time
