    Generations and generations of Vietnamese perfect Pho and turn it into a national dish known world-wide. Some random millennial born in america on youtube: "Pho is not authentic vietnamese dish."

      If that's all you took from the video, then you've clearly missed the point ... the point is 'don't critique evolutions, fusions and revisiting old takes on current foods for the sake of what you think is "protecting authenticity". That part of the interview was about critiquing the idea of what 'authenticity' means and what 'preserving culture' means.

    I loved this interview so much. Viet's message really resonates with me because I'm a first gen Asian American. I grew up eating traditional dishes, my mom's rendition of them, my dad incorporating american ingredients, american foods, you name it. Now as an adult, I cook a bit of everything. Some days I dont cook and will eat frozen foods and then some days, I will spend 12+ hours making a noodle soup. Most of the foods I eat and cook probably aren't authentic, but that's because I've had so much cultural influences and because I have so much going on that I can't spend too much time cooking. Thankyou for such a wonderful episode

    oh my gosh dzung, i felt emotional too! this is surely going to be an amazing series!!! i love what he said about authenticity, about beautiful but untrue family recipes... just perfect! I remembered my mom's recipes, I grew up in a mixture of cultures and cuisines, things always made sense in my heart but I never thought they were authentic... gosh, 10 minutes flew quite fast! great great job, I can't wait for more!!

      I think you might have misunderstood. He was saying 'the modern pho we know and love today isn't an 'authentic Vietnamese' dish in the way you think it is. The modern pho we know today was only popularised in Vietnam 100 years ago or so... that's not to say people didn't eat this dish before then but it wasn't the ONLY understanding of 'pho' and it wasn't a staple yet. So when you sit there aiming to 'preserve culture and authenticity', don't have such limited view on what 'culture' and 'authentic' mean

    Hi Dzung, longtime fan here and I wanted to applaud for your bravery in rebranding your channel. I can see where you are going with this new series and how it's intimately relevant to your cultural identity and concerns. The recent two episodes (interviews with chefs for their culinary philosophies) are really plumbing depths and feel like formal productions of food documentary done by traditional mainstream media. The question on my mind as I was watching is that how would you--a successful, lively, and personable influencer--approach these cultural topics differently, ideally with your usual warmth and accessibility? Is there a new genre somewhere out there in the future? Looking forward to seeing more of your new work, and very best of luck!

    You can't stop the Evolution of traditions. Write them down, cherish them, learn them...and then go on.
    Impara l'arte e mettila daparte, we say in italian. Learn the art, then put it aside.

    They are not eating “those things anymore”? People of the lower socioeconomic totem pole are not going to Italian restaurants or foreign restaurants in VN. Those restaurant and concepts cater to the wealthy. Vietnamese food is somewhat the creole of the east. Concepts are borrowed and inspired, but you cannot boil Vietnamese food to just a fusion cuisine. Other cultures have done the same. So what is authenticity anymore? Everything is fluid? This is such an elitist prospective. Your story might not have the authentic food experience, but to say Vietnamese food is not seems like your way of rationalizing your way of cooking. Don’t downplay a culture so you can feel justified.

      I agree with your main point, that you can't just paint it all with the same brush and say it's all fusion, but I got the impression when he was speaking to food tastes he was saying people will eat also eat x style, not that people only go out to eat that style. Like, even poor people in America will make Italian for themselves, even if they aren't Italian. I would assume the same opportunities exist in Vietnam for people to buy cheap pasta and bottled sauce, whether they be lower, middle, or upper class.

    They dont eat pho or banh bao anymore? 😂 vietnamese cuisine is already a fusion? Do you mean viet food in usa or viet food in vietnam?
    Can take this dude seriously to watch the rest.... You can create your own food for your restaurant, you dont need to create authentic viet food, just dont randomly create a whole narrative about a culture to tell your restaurant's story. Idk why and what is it for 😂
