it's like what my dad says:
If you get in, good. If you don't, also good.

One guy on utube who posts under the handle WildBlueYounder got in to the Air Force Academy on his 4th try. He went on to graduate and get commissioned. I think the academies take note of persistence.

Thanks for the contribution, I'll check it out. I once had a young lady who we interviewed three (3) times, she went to USMA.

Hello Sir, what is your knowledge regarding an LOI (letter of interest) because I just recently received one from USAFA, some have said it is just encouragement to finish your application and others have said it meant you were a competitive candidate. But I have already submitted everything and had a nomination when they sent me the letter. Currently, my medical waiver has been approved by USAFA and am just looking for guidance what an LOI really means.

It depends on what the LOI says. If they say that they will offer you a slot if you complete X,Y and Z then its more than encouragement. Most LOA's say that you will be offered a slot upon passing medical and getting a nomination. You seem to be 100% complete so, I suggest that you call USAFA admissions and ask directly and tell you are ready to go.

How difficult is it to get into Officer Candidate School?

Depending on the branch fairly difficult. You can’t just join as an officer it is still a selection process. OCS is more so a brutal job interview than a transformation, like normal basic training is.

Another avenue is enlisting in your branch of choice. In my case I had no intention of pursuing college or a commission when I joined Marines. I did well enough it was presented as an option. Got secnav nomination to usna and managed to graduate. There’s 100 secnav nominations available every year for Annapolis from the fleet. To best of my knowledge they never fill all of them.
