Quick Weeknight Meal: Mapo Tofu | Cook With Me, Delicious and Easy Meal Ideas 🌱

  • Hello and thank you for watching! Today I am making a surprisingly quick weeknight meal, Mapo Tofu, well my take on Mapo Tofu. I make this fairly often since I keep most of the ingredients in the fridge on a weekly basis. I provided the ingredients and very brief steps below but include more detailed steps in the video.
    Mapo Tofu
    6 scallions, sliced with whites and dark green separated
    1 lb ground turkey or pork
    1 lb container tofu (can use firm or silken, firm is easier to work with), cut to 1 inch cubes
    1 thumb size length ginger, grated
    4 garlic cloves, minced
    Sauce:
    2/3 cup water
    1 tsp chicken bouillon (Better Than Bouillon)
    1 TBL Mirin or sweetened Rice Wine
    1 TBL Sesame Seed Oil
    1 TBL Soy Sauce
    1/2 TBL Sugar
    1 TBL Miso paste or fermented bean paste
    1 TBL Potato or Corn Starch
    Brown whites of scallions, ginger, garlic, add ground turkey and cook through, add sauce and tofu. Cook to sauce thickened and tofu heated through.
    Enjoy with rice!

    Mapo Tofu recipe, if it is easier down in the comments:
