  • Ok, so this is definitely not Whole30 cuz of the sugar, BUT it is super delicious and refreshing for when you finish your Whole30! Shrub is really easy to make and it will last a couple of months in the fridge. All you need is some type of fresh fruit (I suppose you could thaw out frozen fruit, too), sugar, and vinegar (kombucha, apple cider, red wine, or champagne), along with about 24 hours to let everything sit together and get all yummy and juicy. Try some shrub with seltzer or in a cocktail!

    You can just stick 1-1-1 ratio in a jar shake leave out for a few days, shake occasionally sieve and bottle, very easy but if you like the taste of your way its all good just sharing my method not having a dig, peace lol.

      Thank you (and thank you for being polite - I've gotten somewhat accustomed to being told I suck or am wrong...oh the Internet and it's shield of anonymity)! I think if I were using non-kombucha vinegar, I'd def do that ratio (I can't imagine doing 2 parts apple cider vinegar, yikes that would be so potent). Will keep you method in mind next time I play around with shrub!

    This is a great intro to shrub. I had never made or even heard of it before, but I came across a cocktail recipe that I wanted to try that called for ginger shrub (for which I couldn't find any recipes online). I wasn't sure if the recipe in this video would work since ginger root isn't quite as juicy as strawberries, and I was worried that it wouldn't get as liquidy. But sure enough, I used the same ratio of ingredients and was shocked at how quickly the mixture became soupy - just like it was supposed to. Now I'm excited to experiment with other types of shrub.

    Yay! I'm from Portland! Pok Pok is so, so good! I loved the Kombucha video and have been trying to find some scoby so I can make my own. I'm totally going to have to make some Shrub now too! I did make that chicken salad recipe from your other video, and I ended up using some dry thyme because I forgot to get the herbs, and it was rancid! I was so sad, it ruined the whole thing, but I could still tell how delicious it was so I'm definitely going to make it again...with the fresh thyme and parsley ;) Thank you for your inspiring videos!

      Yay, Portland! What an excellent city for food! We didn't get a chance to eat at Pok Pok, just picked up the Som at a grocery store, but people have told me it's so yummy! I also loved the weekend craft market. Oooooh go up to Sauvie Island and pick some berries for shrub, mmmmm yummmm! And oh my goodness, I guess I never realized that herbs go rancid - makes sense cuz obviously they can't stay good forever - but you do make me want to check my spice cabinet. :P Thanks so much for watching my cooking videos, and let me know how you like the shrub - such an easy thing to make and so refreshing for summer! :D

      Yes! One of the many perks here! When did you visit Portland? The Saturday Market is definitely a good place to hang out if you haven't been here before. I think I missed out on the strawberries up at Sauvie, but raspberries and blackberries are coming and those will be delicious too! I never realized herbs would go rancid either! They are DRIED! What goes bad that has been dried?! :D Anyway, I really enjoy all your videos and I'll definitely try out the shrub and let you know! Thank you!!!

      I was in Portland at the very beginning of July last year! I was living in the Bay Area at that time, so we drove up to Portland one day and stayed for a few nights. Blue Star Donuts - OMG! One of my buddies lives in Portland, so he suggested berry picking out on Sauvie and we got yellow and red raspberries, blueberries, and marionberries! And we went to a craft beer festival and of course the farmer's market. And I tried lots of different brands of kombucha and jun and also bought a bunch of gin to take back to CA. :D The food scene there was so fun! Also, just realized I didn't respond about your SCOBY search - if you can't find one locally, check out kombuchakamp.com - the people who run that are the same people who wrote The Big Book of Kombucha and their cultures are legit (I recently ordered a jun culture from them and it was great). But I would imagine that you should be able to find a culture pretty easily in Portland. :D

      Blue Star Donuts! I wish I was eating gluten right now! That place ANNNND if you're ever back in Portland Coco Donuts has THE BEST buttermilk bar ever to grace this planet! So, so good! I do forget how lucky we are here sometimes with all of our food selection. Thanks for the info on the kombuchakamp website, I'll look into that. I'm sure I can find one in P-town too!       Ooooh someone told me about Coco Donuts, but we didn't have a chance to get there! We stopped at Voodoo, of course, but meh, it's fun cuz it's kitschy, but the quality of Blue Star is a million times better. We also stopped at Little Big Burger - OMG. (And I remember our funniest moment and I have to share - so we drove from the Bay Area up to Portland in one day, probably about 12 or 14 hours of a drive, so we were pretty tired when we got there, but also really excited. We had the windows down and we were cruising through town en route to our AirBnB and all of a sudden we hear the car next to us blasting the Portlandia theme song. We were giggling so loud, I think the driver heard us and closed the windows!)

    Portland? Are you from there? I live across the Columbia River in Camas (near Vancouver)... I know the Thai restaurant, Pok Pok, that you spoke of... Great place! Awesome video! Shrub is one of my favorites... I’ve watched some of your kombucha brewing videos, too. They have been very helpful for me, as a new brewer... I’ve been doing this for about three months now. So far, I’ve been pretty successful with an Elderberry blend... Anyway, I’m now going to subscribe... Thank you very much!

      Nope, I'm from Wisconsin, but lived in California for awhile and took a road trip up that way. Portland was so cool and the food was amazing!!! Sadly we didn't actually get to eat at Pok Pok, but go their drinking vinegars at a grocery store. So yummy!

      Kendra Lee, I make an Elderberry syrup for medicinal needs... I haven’t come close to even getting the “virus”; however, about two months ago, I had a lingering cough that wouldn’t go away. I took 1 tablespoon of this syrup every 2 hours for three days and the cough was gone. I take 1 tablespoon each day as a supplement, as well. I will put the recipe and blend ingredients below for you to try. When I make the syrup, I do a second extraction of the blend (like tea) and then make the kombucha from that. I’m still experimenting with it, but so far, it’s pretty good! I’m actually bottling some today! I’m adding some Knudsens organic blueberry juice to the bottles. I’m wanting a juicer so that I can create my own... Anyway, thanks for responding...
      ***Elderberry and Herbal Syrup Blend***
      Each jar contains ᎬᏞᎠᎬᎡᏴᎬᎡᎡᏆᎬᏚ which contain a very high level of antioxidants that protect our cells from free radicals, elderberries are exceptional for fighting off cold & flu virus and assists fevers naturally. ᎡᎾᏚᎬᎻᏆᏢᏚ contain the most vitamin C than almost any other source and are exceptional for fighting off viruses.       That is so smart to use the elderberry pulp for flavoring your kombucha - such a good idea!!! Your recipe is very similar to what I do for elderberry syrup, but the astragalus is interesting! I have dried chopped astragalus and I think I may have some powdered, as well (I'm assuming your recipe uses powdered astragalus, right?). I also add in dried hibiscus to my syrup (and also, just a heads up, dried hibiscus will make a gorgeous kombucha - just such a stunning vibrant pink/red!)

      Kendra Lee, actually no. Everything is whole and not ground. The astragalus is chopped actually... I should add that to the recipe for clarification. I was thinking of Hibiscus recently. I have a tree (bush), so I may experiment with that, too!

      Kombucha vinegar is basically just kombucha that you let ferment for a couple of months. If I happen to let a batch of kombucha go for too long (to the point where it's undrinkable), I'll fill up a couple gallon glass jars with it (cover with a towel and string/rubber band) and let it sit for at least a month, usually more like two months. This type of vinegar won't be as strong as apple cider vinegar, so when I make shrub with ACV, I only use one cup of vinegar (whereas I use two cups of kombucha vinegar if using that).

    Can you make it with kombucha tea or just kimbucha tea that’s fermented to the point where it’s now vinegar? Could I use the vinegar (like) juice from my scoby hotel? Thanks for the video!

      I've never tried making shrub with just kombucha - only with kombucha that's turned into proper vinegar. You could probably use the juice from the scoby hotel, just so you haven't added sweet tea to the hotel recently. You don't actually need too much kombucha vinegar (just like 2 cups), so if you had that liquid in the hotel, you could take that out and then just replenish it with a couple new cups of sweet tea to feed the hotel.

      Thank you! I've never actually made my own apple cider vinegar, but I reckon I could play around with it and figure something out! I do make my own kombucha vinegar sometimes (which basically is done by forgetting about a batch of kombucha for two months and then bam, you have vinegar!). :D

    Very good video! I didn't know about Shrub until this. Could you make Shrub from regular kombucha and not kombucha vinegar? I'll bet elderberry shrub would be super nice for sick days!

      You want to use some type of vinegar with shrub, so I wouldn't use regular kombucha. You would end up with a nicely flavored kombucha, but wouldn't be a shrub. If I don't use kombucha vinegar, I use apple cider vinegar. Yes, elderberry shrub would be lovely!!!

      Thank you, Andrea! As for my teeth - I definitely have done my fair share of tooth bleaching, but haven't done it recently. I've used Crest White Strips and those seem to work very well. When I was in my twenties, I got a kit from my cousin (who worked at a dental surgeon's office) which had a pretty hardcore whitening solution. I used that too much, though, and eventually was told that my teeth were turning transparent! I've really cooled off with my whitening products in the last few years and nowadays, I only use fluoride free toothpaste (and I don't think many of those are whitening). I am also very careful about drinks that will stain my teeth (I make veggie juice daily and drink it with a straw because it has beets in it and those will definitely stain my teeth. And I also take a liquid iron supplement mixed with water through a straw - that will easily turn my teeth purple.). I don't drink coffee (only green tea) and also very rarely drink red wine. I'm very diligent about brushing at least twice a day and flossing at night. I think because I used so many whitening products, they are a pretty good color now, and as long as I don't consume stuff that will stain them, I'm ok!

      Yup, I keep it in the fridge! I try to finish it up within 2 - 3 months (but I think it would be ok longer).

      You could definitely give it a try - if it tastes weird, you can always toss it (sugar and vinegar are pretty cheap). The strawberries I used in this were already slightly dehydrated, so not fermented, but definitely not perfectly fresh and on their way to being far too ripe.

      If you are brewing your own kombucha or jun, you can make kombucha or jun vinegar just by letting it continue to ferment for a month or two. Kombucha and jun, when left to over-ferment, eventually just turn into vinegar. I like to make shrub with jun vinegar because the flavor is quite light, but if you don't brew kombucha or jun, no worries - you can just use apple cider vinegar for making shrub (but the flavor is slightly stronger this way).

      It's just kombucha that has continued to brew for way too long and it eventually turns into vinegar! Sometimes I forget about my brews and by the time I get to flavor it, it's over-fermented, so I put it in a different container and let it keep on fermenting. It has a lighter flavor than apple cider vinegar and can be nice to use in things like shrub.

      Most of the recipes I have found use whole fruit and sugar, but I don't see why whole fruit and honey wouldn't work. ACV would be fine, but I would only use one part ACV for this recipe (kombucha vinegar isn't as strong as ACV, thus why I double up with that).

      AWESOME! Wisconsin is so great! I don't care if it's cold in the winter - we know it's gonna be cold! (When I left California, everyone was so concerned about the WI winters - but I was like, come on, an earthquake could happen at any moment in CA or the constant fires out there...I can handle winter - I grew up in northern Wisconsin!)

      Oh Marci, I hear ya! I switched to mainly brewing jun cuz it likes it around 70 degrees. My kombucha got really unhappy pretty soon after we moved to WI (of course we moved in winter!) and now it's just pretty meh. I've tried to use a heating pad, but it is just so fussy and jun is so much easier!

Je veux visiter Montreal - toute la monde m'a dit que c'est super jolie. :D Bonne idee pour une video avec le scoby hotel - je vais ajouter ca a ma liste. Mais c'est vachement facile - enleve quelque scoby de ta contenant de jun/kombucha, mettre dans un autre contenant, ajoute le nouveau the sucre et peut etre un peut de jun/kombucha deja fermente, couvre avec un serviette (comme quand tu fais le jun/kombucha), et voila, c'est tout. (Mais je vais faire une video!) Bonne weekend!

      Kendra Lee You should!!! Montréal c’est super surtout pour la diversité et activités mais je te suggère fortement de faire un détour à québec city , une très belle ville aussi ;) you cant pass by the chateau frontenac and an experience of sugarshack 😊🤗

      Excellent! Thanks for the recommendations! I actually just watched a show on Netflix from the series Dirty Money about a huge maple syrup heist in Quebec - so interesting! I think Quebec is our next trip to plan!

      I've never actually made shrub using "normal" vinegar - I've only ever used kombucha vinegar. I know kombucha vinegar has a less vinegar-y taste than apple cider vinegar or red wine vinegar, so maybe that could be a solution! (But then you either need to make your own kombucha vinegar or find a friend who makes kombucha and have them leave a batch ferment for a couple months!)

      I keep mine in the fridge and it's usually good for a couple months. I know there are ways to make a heated version and am guessing that would last longer.

      @@happydays1336 Well, I'm not gonna say for sure about the alcohol content because I really don't know and if you don't drink alcohol, I don't want to steer you wrong! Does vinegar have alcohol? I did a quick google search and from what I see, it seems like it doesn't (but don't quote me on this). I read that wine can turn to vinegar, but not the other way around. So I'm guessing the alcohol goes away during the fermentation process? I can't say I've ever felt drunk off of drinking shrub (I definitely feel slightly drunk after drinking my afternoon jun), but I also am only ever drinking one or two tablespoons of shrub mixed with bubbly water. I'm sorry this wasn't more helpful!!!

    Pellegrino is gross! I recommend getting Gerolsteiner from Trader Joe’s. Better mineral content and natural carbonation

      I'll have to try that one - I always see it, but have never picked it up (my husband was always a Pellegrino guy). We have one of those soda stream machines because I was so tired of lugging around cases of water, but still take a couple cases up to my parents' house when we visit.

    OMG one cup of sugar plus the sugar in the strawberries in one small GT bottle! OD big time and unhealthy as can be! Not for me for sure!

      The syrup is a concentrate - you do not drink the entire bottle. You use about 1 Tbsp of shrub syrup and add in 1 - 2 cups of seltzer.

      actually if you use an active vinegar the yeast will often eat most of the sugar leaving behind only a semi-sweet flavor and much less sugar.

      replace the sugar with honey. Much better for you and flavor is better.
