    Not sure if you've ever tried it, but I cook the whole tongue in an instapot, then peel and slice. Have done moose, elk, and cow this way. Highly recommend

    I love Cows Tongue, we almost always have it for Christmas dinner, sliced up right next to the Gammon.
    Except we usually brine it (can often buy them pre-brined) then either roast or smoke it, then cut it into roughly 3mm thick slices (keeping the outer layer).
    The outer layer is a nice additional texture, like the skin on Salami or other cold meats.

    So back in the day, I was in a silly little metal band with a few of my high school pals. We would always go to my friend Noel's house. His mother always made us tacos. We never questioned what kind of meat she was using. All we knew is that it was amazing! Until one day I saw her cutting up the actual meat for the tacos. I was stunned at what I saw. It was a tongue! My mind was going ew! but my taste buds didn't care. It was so good that despite it being a literal tongue. I to this day still ask for lengua tacos whenever I visit.

    Boiled and smoked beef tong is amazing. You should totally try it. It have a long preparation time, but the result is totally worth it.

    I love beef tongue. I usually make a stew with tomato sauce and black olives ( it's a popular Romanian recipe) or just boil it and eat it with mustard and mayo but there's many ways to cook it, it's quite versatile and whatever you end up doing with it it usually ends up being delicious. Pork tongue is also pretty nice.

      @@GlitchyOnAChair well, loads of people eat tongue from lots of different countries like Italians, French, Bulgarians, Romanians, Brazilians, Mexicans, Koreans, Chinese...and a lot more. Nothing nasty about it. Are you also surprised that people eat sausages ? You know those are made with intestines. People eat the entire animal in most of the world. Everything from the blood (blood sausage) to the brain and lungs. I don't see anything disgusting about it. Most of these things are delicious if cooked right.

    I made chili with beef tongue not long ago and it was incredible; I ground up half of it and cubed the rest, put a good sear on it, and then braised it in tomato sauce, beer, and chili spices.

You might not be able to go to the store and buy a cow tongue and prepare it. But you could eat it if it's already been chopped up and prepared.     With all your cooking expertise, I'd like to see your take on a family holiday meal Guga! Two main dishes, three to four sides, and two desserts. I know some of your side dishes can be a bit heavy, but you have done some that were lighter and looked incredible. *BUT* lets throw a twist on it, max cost of $180 total for ingredients!

      He always GETS me! 1 of those over spoilt, born in America kids who's mummy never said NO to him! As a result you got a really FUSSY eater as an adult! My former boss, who was of Greek extraction, was EXACTLY the same! VERY picky! Many a time I asked, him, 'Are you SURE you're Greek?' Wouldn't eat tomatoes, wouldn't eat olives, fetta cheese, wouldn't drink coffee etc!

      depends on how one sees it, we basically turn corn into everything(e.g sugar, fuel). But in practice, I consider corn for tortillas as a grain rather than used as vegetables culinarily

    In Brazil beef tongue is absolutely common and we eat it, usually in a stew with potatoes, carrots, onions and a bit of tomato sauce. My grandma makes it every now and then and it is delicious.

    My mom makes this stewed. It’s almost a 100yr old recipe my mom learned from my fathers mother. Most people are very skeptical about beef tongue until they try it and they can believe how tender and full of flavor it is!

    One of my favourite treats growing up on the farm was pickled tongue. Most common for us was actually moose tongue because we often did not butcher our own cattle very often. We usually ran only 150 to 200 head of cattle so they usually got sold. We were further ahead selling cows and then hunting for wild meat for our dinner table. Pickled tongue and wood roasted heart were our big treats after butchering an animal. Great memories 😊

    Never had cow tongue but I would love to try it. In Hyderabad, India we have a dish called nehari that is a type of soup often made with goat bones and, often, tongue. Those are always my favorite parts. They are so much more succulent than any other meat and the flavor is insane.

    Guga, maybe you can also try cooking the high marbled part similar to a steak. In Japanese Yakiniku(barbeque) restaurants, those are sold as premium cut. They are usually cut into about 1cm+ thick, with skin removed, and grill only to medium rare, top with some lemon juice based garnish.

    Beef tongue is definitely one of my go-to’s everytime I go to a premium ayce kbbq, it’s just so packed full of flavor and really tender depending on where you get it. I even like to undercook it a little bit like how you would do with a steak if you wanted it medium rare, that way you get to experience the full authenticity of the unique flavor.

    I use the double tortilla method. Intentionally overpack. Keep the second tortilla on the plate and eat over it letting whatever drop on it. Once I’m done eating I have a second normal size taco ready to go…

    Guga. Try to make Budda Jumps Over the Wall. This is soup that is popular in various China Towns around Chinese New Years. It generally is cooked for days, as the ingredients are dried. Two mystery meats that come to mind are (dried) Sea Cucumber (it looks like a dried dog turd!) and Fish Maw, which is dried fish swim bladder, (looks like old crusty Styrofoam). Tripe is also a common ingredient. It's a mix of dried and fresh ingredients that takes on the flavor of the broth. I'd recommend dried mushrooms like Wood Ear, and Shiitake. Dried Chinese mushrooms make a great broth. Reconstituting, and cleaning the Sea Cucumber can take days. Possibly sous-vide the Cucumber? The folklore is the soup is so tasty, that it would make Budda (vegetarian) "jump over the wall" to eat it.

      It's delicious. A salsa made out of toasted peanuts, tomato, chili (guajillo is great), sesame seeds and onion. Some people add sour cream and raw cinnamon.
      It's out of this world! Typically prepared with pork or chicken. But you can add it to everything

    Guga, thank you for showing how good cow's tongue can be. A lot of people (even in my country) sees it as a lesser quality/gross kind of meat. I absolutely dig it. Here in South Africa we usually cook it in the pressure cooker, then peel the skin, slice it up and serve it cold with sweet mustard sauce at Christmas. (serves it cold as Christmas is our hottest season). It's devine. Your taco version... Will definately try it out!

    Lengua, usually eaten as barbacoa the morning after a night of drinking. I like to smoke it low and slow, peel the skin, chop it up, and fry it with its own fat. Add some chopped onions, tomatoes, and cilantro. Serve on fresh homemade corn tortillas with salsa and slice of lime.

    We have tongue here in the supermarket, sold in slices (deli style). The butcher sells it as a whole too if you want it. Nothing weird about it. Greets from the Netherlands.

    One of the best dishes I ever had was Gyutan Don (shaved ox tongue), from a Japanese restaurant in Melbourne. That was 12 yrs ago and I still remember it to this day.

    I thought dry aging concentrates flavours by removing moisture. Don't you lose that if you then boil the meat in water for 1h?
    P.S. Dry aging could still change taste/texture via (1) causes chemical breakdown of protein and fat constituents occurs which result more intense nutty and beefy flavor (2) beef's natural enzymes break down the proteins and connective tissue in the muscle which leads to more tender beef. But still, seems like a lot of dry aging's benefit is lost if you chuck the meat in boiling water for 1h. Especially if flavour leaks into the water

    Here in Mexico, we eat cow's tongue as barbacoa, which is slow cooked beef. Usually, the whole head of the cow is steamed and you can also eat the cheeks, lips or even the eyes of the cow. Here in my home town, it is one of the most common choices to eat when you suffer from hangover on sundays.

      in the U.S, its really not that rare. most places don't advertise it, but you can ask for it. I know we sell out of Tongue, Heart, and Cheek very quickly. that being said, we also have a very large hispanic population here. if not for some of my family friends who are hispanic, I would have never tried cheek.

    I love trying new foods and will eat anything atleast once just to try it. That being said for some reason I'm terrified of trying tongue, I will eat testicles, stomach, liver, all sorts of unusual and taboo things but tongues just makes me cringe and I can't explain why.

    Beef Tongue.
    Boil in hot water. Remove the skin. Dry off. Put in the smoker with hardwood. To internal temperature maximum 145 degrees Fahrenheit.
    Or soak in good salt brine (with Prague powder) for 3 days. Remove the skin and put in the smoker as above.
    There are so many ways to make beef tongue good.

    I always buy some sliced tongue as well when I buy sliced ham from the butcher section of the supermarket. My great grandmother told me that a slice or two of tongue every week would keep me strong until I die

    We eat beef and goat tongue here in Bangladesh. Firstly we clean the tongue and cut of as much meat we can. Then put the rest in fire and pill the covering skin. After that we cooked it altogether with regular meat. It’s so much delicious.
    Btw, in Bangladesh we don't use specific cut for specific portion of cow or goat or lamb. After slaughtering we take off the animal skin with knife and this skin we sell to leather collectors. We cut every part of the anmial in small pieces. We even chop the bones in small pieces and so also fat, lungs, heart, kidneys and liver except stomach and intestines. Then we mix the meat, fats, bones, internal organs altogether and cook. The stomach and intestines are cleaned with hot water and knife (we use 'Boti' as our knife) and cut them even more smaller pieces and cook them in other way).
    To cook meat, we frist clean the meats, fats and bones with water, sometimes soak the meat in salt water for sometime to extract the blood. Then we start the cooking process. We take large pan called 'হাঁড়ি' or simply sauce pan, then some mastard or soybean oil in the hot sauce pan. After the oil become hot we put whole garam masala then some garlic and after a few minutes a lot of sliced 'piaj' (onion and/or shallot) in the heated oil with some green chilli. We cook until the onion become brown. Then we put the meat along with bones and fats and salt, and mixed throughly in high heat. When there is a satisfying color after cooking few moments and the meat started to release its water we add garlic paste, ginger paste, onion paste, upto taste, Turmeric powder, coriander powder, red chilli powder, cumin powder, cumin paste. Mixed throughly in high heat and the cooking process is going on until the meat become cooked properly. Plz try it Googa. I know you will love it. Love from Bangladesh.

    oh guga this taco like thing is made in turkey street food its called söğüş :D (yea totally diffrent name) its made from whole head of sheep. tongue cheeks the fat around eyes and brain may be some neck meat. its served cold on flat bread with red onion diced tomato and parsley. for seasoning red pepper salt an lots of cumin. just boil the whole head with bay leaf separete pieces and ure good to slice and put on bread. u should try that...

    In my view, roasted Beef tongue is the best for beef tongue dishes, cuz it will bounce in your mouth while it's flexible texture, also the flavor will come out easily when u slice them into flimsy pieces and put them on fire.
