Picanha on the Mesa 400 Monument Gas Grill! Perfection!

- How to reverse sear a whole Picanha indirectly on the Mesa 400 gas grill! Super easy and turned out fantastic!
• Started with a nice Picanha from Costco and sliced into steaks.
• Trimmed some fat and kept a nice ¼” layer of fat cap.
• Seasoned with salt only about 3 hours in advance.
• Centered on the middle of the grill fat cap up with the 2 outside burners on high.
• Was shooting for a grill temp of 280F degrees.
• Once it got close to 90F degrees on the Meater+, we checked it to see how it looked and flipped it.
• When it got to about 110F we started to sear the bottom since the fat cap was looking good.
• Pulled the steaks when it got to 120F degrees and let it rest.
• Sliced this with the grain and enjoyed!
Summary: This turned out better than I expected and with just the salt in advance is my favorite way to cook these. The flavor was really perfect and we had a great meal!

I know you like meat more on the rare side but that looked perfectly done to me. Was that from Costco? Lancaster Costco had them last time I was there.
