Let eggs cool off for about 20 to 30 minutes. 3. Crack and peel the egg shells under running water. I like to peel the shells under running water because I find it’s easier to peel them this way. The water serves as a lubricant to help the shell come off easier. For some reason, egg shells can be resistant at times and hard to peel. 4. Chop the eggs into small or medium size pieces and then add them to a small mixing bowl. 5. Season eggs with salt, dill weed, paprika, and pepper, then stir in well. I like to add the paprika just to give it color… 6. Next, add the mayo and mustard, then stir in well. 7. I like my egg salad chilled so I always store it in the refrigerator to chill for while, then serve it on bread as a sandwich. Enjoy!!!

A trick I learned and it works beautifully, put your eggs in the cold water, turn the pot on high and as soon as the water begins to boil, turn it off, and take the pot off the burner. Let the eggs sit for 15 minutes. Perfect eggs. They don't get rubbery, and they don't get the gray color you see here. Not complaining, Philly Jay does a great job. Love his recipes.

I have done it that way for years. 13-15 minutes pending on size or my desired doneness. Soft-boiled, hard-boiled.
I use minced onion and celery salt sometimes. I love creamy egg salad or deviled egg salad.lol

Three add ons I've used would be minced onion, minced sweet gherkin pickle along with a little of the pickle juice and minced celery.

When I'm boiling eggs, I like to add a splash of white vinegar to the cooking water. It keeps my kitchen from smelling like sulphur.
Also makes the eggs easier to peel.
