Bilib talaga ako kay Ninong Ry kasi alam niya talaga properties ng bawat ingredients na ginagamit niya. Ang galing nung all-purpose flour = equal parts Bread flour and Cake flour. In baking, etong 3 harina na eto laging gamit and ang difference lang naman nila is yung protein content. Cake flour has the least protein kasi gamit sa cake so mas malambot. Bread flour highest protein para makuha chewiness ng tinapay. All purpose yung in between. So it really make sense to combine cake flour and bread flour para mag meet halfway yung protein content to mimic All-purpose flour.
