- Pork Steak and Sausage in a Tomato Gravy is a delicious alteration of the Pork Fingers and Sausage recipe that my mom used to make.

Recipe:
Ingredients:
3 Tbsp cooking oil
2 medium onions chopped
3 stalks of celery chopped
2 tsp garlic minced
1 bell pepper chopped
1.5 to 2 lbs of pork (I used country style ribs cut up.)
1 lb of fresh sausage
4 ounces of tomato sauce
2 cups of chicken stock
Seasoning Mix
2 tsp cayenne pepper
1 tsp white pepper
1 tsp black pepper
1 Tbsp salt
1 tsp dried thyme
1/2 tsp rubbed sage
Directions:
1. Heat a large cast iron pot over high heat
2. Add oil to the pot, add pork and brown
3. Add half of the vegetables and cook until soft (10-15 minutes)
4. Add tomato sauce, chicken stock and seasoning.
5. Cover and let cook on medium heat for 1 hour stirring occasionally.
Serve over Rice

i stumbled across your channel just watching cooking videos and was completely surprised to see NuNu's sausage. I have friends who live in Lafayette and when i go visit, i load an ice chest full of meat from there to bring home to alabama. i am going to try this recipe for sure.

Yeah, the sausage may be tough to find. you could use smoked sausage. I would slice the sausage into 1/4 inch slices. It will give it a little bit of a smokey flavor but it will still be great.

"Don't crowd the pot" , immediately crowds the pot. The most important step! That meat didn't brown nearly as well as it could have. Good methods though, love that pot.

A lot has happened since these videos. I got divorced ans recently remarried. I moved out of a house and into an apartment. We should be back in a house in April.
