    My grandfather has made maple syrup for many years, the mold that forms on the syrup is harmless, just strain and use it for many years, it never gets bad.

      Additional you should heat it up before straining

      @@lorraine5587 That's what I found researching my funky top layer on my maple syrup; however, if it is refrigerated it barely forms.

    Thanks for telling people this Heidi! Great info. If its PURE, 100% Maple Syrup, it should never go bad, same with pure honey; vacuum sealing "seals the deal." However, maple syrup, once opened, really could use refrigeration after its opened because it will mold if not used for a long period of time. HOWEVER; if it molds, don't throw it away! Remove the mold, warm it up, strain it and you're good to go. Again, pure maple syrup and honey never go bad! Honey, on the other hand, never needs refrigeration but can crystallize; just warming it up will take care of that by putting the jar in in a warm, but not boiling, pan of water until the crystallized honey is liquid again. Sorry if I'm repeating things, but I used to help process maple syrup here in Maine. The syrup is hot when it goes into a container and if that container is a jar with a sealing lid, it will seal on its own. However, plastic containers are also sealed, but not the best for long term storage. Blessings 🥰

    Hi heidi! I'm so glad that I watched your video about maple syrup! We just got two 1 gallon plastic jugs at a really good price and now I will be storing them properly! I have learned so much from you over the years and just want to take a minute and tell you how much I appreciate it!       What a great item to get a good deal on! 😋 I put a little maple syrup in my coffee as a natural sweetener, but I have to be careful or there's none left for pancakes...it's yummy for lots of things!

    Another way--I buy maple syrup in gallon containers from Azure. I repackage into quart jars by heating the syrup to boiling and pouring into hot mason jars. I put the lids on immediately for a quick seal. So far, so good. I've kept my syrup for several years in this manner.

    Thank you for your video.
    I've never had unopened Maple Syrup go mouldy but opened stuff I have.
    I just skim the mould off and reboil the syrup before packing it away in a sterile jar.
    "Normal" moulds don't scare (green and white) me but those neon coloured moulds sure do. I toss anything/everything with orange, purple, black, and weird coloured moulds.
    Mum doesn't do jam like she used to and I'll open a jar to find a little mould and just scrape the top layer off before using.
    I've taken over the Jam making and everything is super sterilised and then water bathed for that extra good seal. No mould in my jams, ... yet.

    And for people that might not be aware, if you get your maple syrup from a place like a farmers market, sometimes it looks like a "mother" is in the syrup. It is not mold and you can just re-process the syrup. Most market vendors (at least in my area) sell their syrup in glass jars.

    Good idea to vacuum seal maple syrup even in glass bottles once you open it. I use small amounts at a time and it takes me awhile to work through a bottle. I have learned the hard way that it will mold once the jar is opened.

    Okay Heidi, I am on my way to transfer my maple syrup to glass jars and vacumm seal them. I am so thankful for you, I had no intention of moving my maple syrup to a glass jar, but I want them to last and be safe to consume. Time to work now 🤗, but before that I missed the video before this so, I will watch that first and then maple syrup work.

    Thank you for this. I store most food items in glass but had not thought of moving the maple syrup from its plastic containers to glass jars m, nor did I have a clue that it should be vacuum sealed. I truly appreciate all the knowledge you share. ❤

    I buy my maple syrup from Costco too. Good stuff. It doesnt last long around my house with the 7 grandkids. Lol

    I just can mine from my own trees when I get done boiling it down. I think it lasts forever. The oldest I've been using lately is from 2018.

    I take those blasted sealed tops off with a fork. Just push the tines in far enough to reach the other side of the opening and pry it off. It doesn't work as well on larger openings like peanut butter though.😉

    Yep mine got moldy. I was told it needed to be refrigerated after being opened-air sealing should solve it because that’s all they do when after they bottle it up.

    A few years ago I grabbed our maple syrup from the fridge and found mold growing on the surface. So gross, especially since we had used it shortly before that and it surely had mold in it at that time too. Anyways, I can attest that it can happen. It's good to know we can purchase a big container of maple syrup and put it into smaller containers to keep it fresh longer.

    I chose to heat the maple syrup and ladle it into hot sterilized jars from my oven and put lids on hot, it is another step but maple syrup isn't cheap anymore

    I’m so glad to see all these posts and you sharing how to store syrup. I harvested syrup two years ago and have it stored in a gallon jar in my fridge. It has not gotten mold but takes up too much space. Do you think I could vacuum seal them now in smaller portions after it’s been refrigerated all this time?

      Not particularly, I make my own support tops but have get to start making my own panties. I currently wear Hanes. I used ot wear only Jockey but they stopped making their product as good as they used to and now I find the cheaper ones hold up just as long if not longer

    Do you think honey would store better vacuum sealed too. I know you said it’s not necessary but maybe it would not crystallize? I just bought two large jars from a local farmer and had forgotten that I had two others.

      I have actually wondered if vacuum sealing would prevent crystallization since I have old unopened jars of honey that have not crystalized. At least not last I looked

      not sure where I saw this, so verify yourself. we have some crystallized sticks so I looked it up. turns out a warm bath desolves the crystals. still good to go.

    Good video. Never personable. I've been trying to find "someone" that can tell me how long an opened glass bottle of 100% maple syrup can still out without getting mold. No matter what I search they all say refrigerate but no clue as to haw fast that needs to happen. Can I let it out over night for the next morning? Does it grow mold in a day? a Week? 15 minutes? What? Anything you can share would help. Thank you for all you do.

      It will depend on the syrup and the water content. The less water, the less likely it will develop mold at all but because of the sugar content, it would still take awhile even in syrup that has a higher water content than another. I personally have never had any grow mold

    I was wanting to know how long past the use by date the Costco plastic jugs will keep without molding?

      I personally do not know, I have never had a problem with them molding and have had some stored for a couple of years like that. I do not remember if those who developed mold on their unopened jugs in a couple of months were the same brand or not.

    I'm having a hard time understanding how a screw top lid vacuum seals. Does the lid turn as the air is take out of the chamber?

      Please see the full length video on just how to use the chamber where I explain in more detail that I linked in the description box. The band is only there to hold the lid in place but the reason you do not put the band on too tightly is that it would prevent the air from being removed from the jar.

      No necessary but for those who feel the need to put that extra amount of time and energy use, they should do what they deem best. Keep in mind, this video is from 2021 and this maple syrup is still great

      It depends on the plastic and for how long and how much air space is in there. I do find leaving an open plastic bucket of honey for a few years causes the quality of the honey to degrade but if you work through it fast enough it is usually fine.

      It really depends, if it is stored on large plastic heavy duty buckets, it will be fine for some time but once you open and start working through that bucket, it may be best to do that. I find that honey that has been opened and left in a plastic bucket for years tends to lose quality over time where I do not think this would happen in glass jars with less air space

      I used to take it up to past 15/400 but now I just pump until the needle stops moving and don't bother with the number
