For this setup I appreciate a power bank like this. But for mobile portable switch use, I prefer to have my powerbank of any type attached to the back, my reason for that is I don't want cords hanging off the bottom leading to a power bank that is sitting loose. But in this situation.....I want that setup for the projector because that's epic.

Try AAXA S1 or Viewsonic M1+, your luggage will be lighter by half. All you need is just only one USB C to C cable to transmit the signal and power your switch without a dock. In fact, your projector's battery will power both projector and your switch. AAXA S1 has better image and battery but M1+ has better sound and portability. If you need even much better image quality and better sound, you can try Viewsonic M2 or M2e. Again, you just need only 1 USB C to C cable, but this one, your Projector must run on AC Power.
Is the tomtoc case good.? Heard some reviews on Amazon that it messes with the analog sticks

I want to set up a similar pack, but for my jailbroken, Gamecube-compatible Wii, so that I can play Gamecube games such as Smash Melee and Mario Kart Double Dash, pretty much anywhere. I already have that Ravpower battery along with Gamecube controllers, only really missing a portable 2.5" hard drive (or USB flash drive if that works as well, unlike on the Wii U) and projector. I would also like one of those screens that attach to the Wii console like the PSOne screens, but I can't find one anywhere online...

Damn that projector is more expensive than the OJO projector. It does have 720p, which unfortunately the OJO only does 480p.

That's Sony's MP CL1A which I think is no longer in production :[ We love it but Sony seems to give up on their mobile projectors pretty quickly!

Hey just letting you know using 3rd party usbc cables with the offical dock is just as dangerous, if not worse
Pretty much anything 3rd party can never be 100% safe. Nintendo really botched it with the Switch's USBC port :\ We've tested a ton of cables with no problem but we personally only carry Nintendo's official ones 👍

In an earlier cut I mentioned the BASSTOP replacement shell but it's definitely a viable option!

I have done it and I have now a second dock that take barely any space in my travel kit. You could get a dock and the "Power House battery" with this option.
