@@RuledMe I get that. I’m a female trucker (learned in the military) and I used to load in slaughterhouses and I don’t eat meat, except fish. I’m allergic to dairy. And I feel better eating tons of greens. I’m not keto I just try and keep carbs moderate

I cook keto vegetarian/vegan foods every now and again just to vary my diet up some, but the vegan and vegetarian recipes tend to get a lot more hate on UA-cam so I will likely focus on more 'classic American' style dishes moving forward. People ask for creative or different recipes and when I post them, people hate on them 😅

I think there's no need for yeast in the cinnamon roll. Yeast feeds from the sugar (carb) in bread flour. Since your using almond flour..I think you can skip yeast
There's real maple syrup used in it (or you can use sugar instead) to feed the yeast. The yeast will eat the active carbohydrates in it. You can alternative feed yeast with inulin which is a low-carb sweetener.
😳 Something I haven't seen before at 10:27. Does the oven accept baking sheets like that or is there a rack installed in the oven to carry them? It surprised me and makes me curious to find out if this is a specialty oven or an after market addition.
Most regular soy sauce won't have sugar in it, but it will have a small amount of carbs (less than coconut aminos). You can definitely use coconut aminos if you prefer to avoid soy or are celiac, though!
Low-carb maple syrup. You can either make your own ( www.ruled.me/thick-sticky-maple-syrup/ ) or you can buy some. I usually use Walden Farm brand, but there are plenty of others (Choczero is a brand that a lot of people like, too).
The sugars in the maple syrup are eaten by the yeast, which indeed does discount the carbs in it. Even if you don't think that, I include the full carb counts of the maple syrup in the nutrition information and they still come out keto-friendly in terms of carbs. If you'd rather play it safe (even though I've seen the research and tested blood sugar levels after eating these), you can feed the yeast with inulin.

The easiest will be sunflower seed flour - it's a 1:1 replacement for almond flour.
