This was a revelation. I have always been a bit suspicious of attempts to frenchify modernize Indian food - I have always been & will remain a " chole bhature, rajma chawal, dal makhni lac ha parantha" person but I can respect the ingenuity & thought that has gone into this menu. A very interesting episode, thanks Kunal.

Very rarely have seen Kunal so calm, but I guess the food on the table really made one think. It was like dismantling a dish and then experiencing it eating it. Even though the quantity looked less Iam sure the experience itself is fulfilling. Also agree with the chef, in India there is so much of detailing and love while making food so so many wonderful techniques passed down through ages and keeping the taste intact and the awesomeness alive. 👍🏻😊
4:33 it mentioned as Kohlrabi Taco and at 5:38 you said Parsnip. Kohlrabi and Parsnip are two separate things. I love to eat blue cheese ❤❤❤❤. It's look more like ravioli. Wow desert look amazing. How beautiful my country looks when united.

Been there and when the food started to come in I was thinking, we will need to go somewhere to eat so that we do not go hungry. But in the end of the 9th course we were full and they asked if we wanted to repeat something. If you want to surprise your wife or gf go to this place...

So people of different cultures can appreciate it. I don't know why we think foreigners should only know about butter chicken and garlic naan. This is a way to introduce people to more traditional foods who maybe are not that adventurous and want to stick to classic french/ italian methods.
It's mainly for Global recognition n International customers. Obviously people like us will not go every day to eat thr it's a one time experience. The idea is to know others our food n suits thr palate.
Just think for a second, does American food gets 'approved' by any Indian title or any chain of restaurants?.... French food is one of the worst in the world with almost no taste, bad presentation and tiny portions (compared to varied tastes of indian cuisine), yet they call their food a work of art.. so do they need anyone's approval for that??... isnt this hypocrisy?

I don't like the idea of leaving the traditions behind and doing something unexpected. Indian food has evolved since ancient times and now this is like fooling those who don't know what real good Indian food is.

I wud love to try Duck & Waffle. as it has medu wada batter Waffle, Duck preparation & Curry patta Honey sounds unique

Lovely video. Not too expensive too for a Michelin star restaurant. Around £65+tax pp (Rs 6500+tax pp). Will definitely visit some day ❤
