  • Germany is well known for its love of bread and many different bread recipes. When abroad, Germans often miss their bread from home which is usually darker bread made from rye or whole grain flour. In this episode of “Baking Bread” DW’s EU correspondent Georg Matthes explains how to bake a rich and heavy “Graubrot” and what you can learn from it about EU politics.

      I love rye bread with caraway seeds, pumpernickel, fresh baguettes, the bread rolls served for breakfast in Germany and Czechia, hearty high fiber bread, proper bagels (not the fluffy chain place kind, but the ones that are boiled before they're baked)... I guess I just love bread. I love this series!

    Probably because people in my culture love euphemisms and use them quite often in various different media (helps to get away from political pressures and makes people ponder more deeply), I clicked on this video because of the title.     hello! if I do not have leftover bread nor a meat grinder, can I use sourdough starter instead? Or what would you recommend?

      @Rosie Burke That's all right to do, but make sure that before you bake your bread, remove some of the dough for a new sourdough starter and keep it in the fridge. Your own starter gets better and better over time - The dough gets more "character"! 😉

      @@dweuromaxx Yepp, the village I grew up in had their communal sourdough from around the beginning of the 18th century. But unluckily the tradition of baking in the community oven failed in the late 1980's , so that killed that insanely tasty sourdough starter (literally). I cry for that ancient gem lost to us.

      @Happy_Dutchman Since the bread has a firm crust, it will certainly be okay for a week. But make sure that it is stored in a not too humid place, best wrapped in a linen cloth or in a bread box.

    When you say "brown flour" do you mean wholemeal flour?

      no , German bread is not only from white flour it is brown or dark we took Rye! ore same time Spelt. and do not exchange Sourdough (Sauerteig ua-cam.com/video/LFh5DfreaUM/v-deo.html) to Yeast it is the most imported because it gives you aroma and taste.

      I am a German who has been baking her own bread for a couple of years and I have no clue either. Could be whole wheat oder rye flour but I've never heard the term brown flour before. 😅

    Why fresh yeast and sourdough together?

      @Edison Tian Good question! You need fresh yeast in order to ferment the starch and form carbon dioxide: it is needed as a leavening agent to loosen the bread. Without yeast the dough would not rise properly and would only form a solid lump. You also get a fresh yeasty taste next to the pleasant acidity of the sourdough.

      I know it I am late to the party, but you do NOT need yeast for baking bread when you use an active and healthy sourdough starter. He will do all the work. However, if you are short on time you can always add yeast to speed up the process. With the help of yeast you will have bread in around 3 hours compared to the sourdough-only process lasting around two days.

    The recycling "method" is absolutely illegal in France, it produce an horrible taste bread. Interestingly, I am curious to see a German recipe integrating a very small amount of bread already cook from before.

    1:48 Yea right... Germany only seems rich because the state is devouring the money of it's citizens, an average German has less financial savings then the average Greek has.

      @Jay Baruna Officially are actually 24 EU languages in use at the European Parliament. It is a fundamental democratic principle that every EU citizen can become a Member.
