When I was a child my mom always bought bags of frozen sliced mushrooms. I don’t remember them ever tasting slimy when she put them in dishes, but I do remember trying to buy those bags as an adult … and failing! Just can’t find frozen mushrooms anymore so I have slowly gotten used to the texture of canned. I dehydrate them myself and may have to try my own canning too. I am worried that your recipe would be too vinegary for me but Leisa at Suttons Daze cans them straight I think (pressure cans) so thank you for the inspiration. Too bad they’re usually quite expensive though I can get a large punnet of “irregulars” for CAD $5.
I have pressure canned them straight as well, I use them a lot in cooking! I don't think Darryl has tried them straight out of the jar pressure canned though. He sat there last night and ate an entire jar with dinner, so I don't think they have much of a vinegar flavour to them lol! I have never seen bags of frozen mushrooms I don't think, but the ones I have frozen the texture definitely changes maybe its the way it is frozen! It's mushroom 'season' at the moment, I'm hoping I can get some cheap next trip down now I know how he likes them :D
Mushrooms, yummy. Have you tried breakfast mushrooms? (sauté mushrooms in a little oil and butter, when browned add a splash of Worcester sauce and cream to taste. When I make beef stroganoff I add large chunks of mushrooms so I can have them with a little beef. My husband picks them out of his meals hence I cut them in half. Another breakfast dish I make for myself is to sauté mushroom slices in a little oil and butter, when cook add a little milk and cheese (or cheese substitute). It goes nicely on toasted sourdough or grainy bread. I can't wait for your garlic recipe. Hope you get a good amount of rain today. Nice to hear you having breaks, that's most important.
I'm sure D would love both of those!, I just don't like the larger chunks of Mushroom, its a bit of a texture thing for me, but I don't mind them diced or minced up in other dishes! :D

Love me some mushrooms. I use a bolied egg slicer to slice my mushrooms, works like a charm. Also works wonders for slicing strawberries. Just a tip if you would like to try.
Yeah, as they defrost they go sort of floppy and slimey, fine for putting in things still that are being cooked for the flavour, but no good for eating as such, or not to Darryl's taste anyway! :D

Here in 🇨🇦, I plant my garlic late in the fall, sometimes after the first freeze. It sits in hibernation over the winter and it’s fun to see it pop up in the spring. This gives the garlic lots of time to develop through the summer giving nice round bulbs. Realize you don’t have winters like ours but may be worth a try.
I have tried most years, but I think the problem is that even when its cold here, its warm during the day, I have found if I leave it two seasons it does a lot better! But generally speaking we don't get a great harvest, even when its frosty overnight it can still be up in the 10-15celcius during the day and I think it confuses it a bit :S

Some parts of the year they're more expensive than I will spend! But if I can get a bunch cheap at some point and can them all up, then we're set, can buy some fresh when they're cheap fro him to have but have them on the shelf the rest of the time!

I'm with you on the mushrooms....they are horrible in my opinion....LOL. Darryl can have all the mushrooms and anchovies in the world!! When I make pizza I use about 3-4 times the sauce you put on yours, pepperoni, sausage, sauteed onions and red peppers and mozzarella cheese. Just had that today. Variety makes the world go round and different strokes for different folks.
By the way, there are a lot of people posting old videos as new so they don't have to continuously film and they still keep the algorithms on the good side. Change the title or maybe put two small videos together and title it. Food for thought.

Hi Nyssa, I'd like to give this one a go in my water bath canner, we are below 1000ft so it would be 20 mins at a rolling boil but I didn't quite get the head space you used. What head space should I aim for if I'm using 250-350ml jars?
You're going for a 2cm/1/2 inch head space, I have a tendency to be a little bit generous with my head spacing because these jars narrow at the neck a bit so I tend to fill to the shoulders. Did the headspace drop post pulling them out of the canner ? You might need to 'cook' the mushrooms in the lemon juice a bit longer, you need them to drop their air and absorb the liquid so the texture/quantity of them doesn't alter too much in the jars after you've packed them :)
This was a yeasted one, and I do 750g water, 90g Oil, 1200g flour, a drizzle of honey, 20g salt, and 15g Yeast, all kneaded with the kitchenaid, into 250ish g balls and then in the fridge till I use it :). If I'm doing it the night before, I drop the flour and water to 700 and 1100ish and add 100-200g starter - I like my sourdough ones a little higher hydration. Prove overnight, divide into balls in the morning and fridge for the day :)
I'm sure there's potentially an option, the Rocklea Markets maybe, but I let Adam know I'm coming to him the week before and he keeps an eye out for stuff cheap for me too!
I'm allergic to mushrooms, but the rest of the family like them. I just cook them in butter usually. I do asparagus the same way, I dislike the smell of them but the family loves it. I have lots of food allergies, but I refuse to stop my family from eating them, my husband is allergic to mussels, we found out on our wedding night! His face swelled up like a balloon. Recently he has discovered a gluten allergy, only because he went GF in solidarity with our eldest as she'd been diagnosed with coeliac disease. He found that all the aches and pains disappeared.
I and the kids don't mind the mushrooms in things, I quite like the flavour they impart though! But I just can't do the texture of them. I'm a bit the same, not necessarily allergies anymore, other than the dairy, the boys at one point had to go on an elimination diet of only Pear, Sweet Potato and Lamb, but we got through most things except the dairy, but I cook them plenty I have no interest in like the sweet potato gnocchi :D
I’m on the GC and have had endless trouble growing Mushrooms also. However- I’m now growing the Red Wine Cap mushrooms. They grow outdoors in wood chips. I have a little patch under a fruit tree to keep it shaded. It takes a while to get going but once the mycelium spreads they pop up beautifully!! For years, I have made marinated mushrooms at Christmas. Then, last year I discovered I could preserve them.

One of my favourite foods , butter mushrooms but i normally only ever pressure can so this is different thanks for sharing

Im guessing the process is similar to supermarket bought capsicum and artichokes in a jar?
I assume so, yes, acidifying and then marinating and processing it!

Nope, just straight lemon juice, the couple of recipes I looked up didn’t have water added!

what are the cup mesurements of the vinegaru used in marinated mushrooms and what size punnets u used.
I had 2 x 500g Punnets, so I used 1cup of Oil to 1.5 cups of vinegar (a 60/40 ratio of vinegar to oil :))
