    I will start by saying I have the Hone and am happy with it but am a little frustrated that a "Pro" kit is now released. In my opinion at the very least the 700 grit disc should have been included in the basic set.

      I wasn’t frustrated, I think it’s exciting to know that a company is listening to the market and releasing really high quality products. Every company has an initial release that has to start somewhere. They are leaps and bounds in front of everyone now and their next two releases (not discs) will be an even even further game changer with the rolling knife sharpener world that no one has done yet.

    At 6:28 mark of the video there is a blue screen that indicates an emergency broadcast as if the nukes are inbound. Upon closer examination it looks to be a joke from the movie The Purge. I’m assuming this was an intentional insertion and perhaps some strange attempt at humor? If so, I don’t get it and found it disturbing since we are living in some dicey times and him going through lots of global uncertainty. I’d suggest you edit this out of your video as it reflects poorly on you and your channel. Just one person’s POV.

    Firstly love the in-depth reviews thank you. I was deciding between the Hone and the Horl 2 and have decided on Hone in part because of your reviews.
    Secondly, I had a question hoping you might have an opinion on. I have a few higher end Japanese knives that have a Rockwell rating of 60-62. I’ve read that with the higher HRC’s (above 58) that a 5,000 or 6,000 extra fine grit stone should be used. Do you find this to be true? As my only concern about the hone is the highest grit disc they have is the ceramic one @ 3,000. Appreciate any opinion you have on this.

      Thank you very much. I appreciate you watching. A higher grit continues to remove the more course marks left by the courser grit before. The higher the grit the less steel you remove. The hardness means it will take you longer to remove steel with finer grits and when you are in the 6000 range and up your are essentially polishing the metal as the more striations you remove (cleaner surface of the metal) the shinier the surface. Japanese, German, even Chinese they can all use the same steel. X50CrMoV15 is X50CrMoV15. The hardness means the knife will wear but will take longer to sharpen. A 3000 used correctly at the proper angle will not cause any damage. Damage a majority of the time is a user issue not a grit issue.

      @@pusmma correct. Honing only to deburr and remove that wire burr or other burr than develops. Anyone can sharpen using up to 2000 diamond, then 3000 honing. And finish with a leather strop and you have double razor sharp knives but it’s a process and time and all depending on the hardness of the steel, steel ingredients, length of rolling needed. After 20 or so sharpenings it becomes intuitive based in initial inspection, feel.

    Jay How much time or how many rounds would you reommend to start with with a pro kit for a first timer in real world? Can you give us a recommended pattern for each disc that we could aim the first time? Thanks, great videos!

      Hi Hanoii, There are so many variables that's a very hard questions to provide a single answer, but I would say the essential for someone who has knives that are just dull but are not damaged or nicked would be the following: 700 grit, 1000 grit, 2000 grit and 3000 ceramic. The idea of the pro accessories kit (which I would recommend) is that is has all you need. So getting the pro accessories kit also provides you a very nice leather strop which is also important. All my videos show how to use all these (I don't think I have done a 200 grit repair yet but that video will be coming), but I have many how to use including the AngleMate so you can make sure to sharpen at any angle of your knife. Hope that helps.

    Hi Ukelele Jay, I watch your knife sharpening videos all the time and I am very interested in getting the HONE rolling sharpener (it is one I can afford). If I just buy the one with the 2 disks that come with the basic kit would it still work for simple kitchen knives like Henckels and Missens chef knives?

    I picked up the new upgraded ball bearing Hone, your videos are solid and I'm happy I stumbled across them. They included the ceramic, and I also added the 200 for really banged up blades.

      The Work Sharp has limited angles and limited discs. Also only one side to sharpen with and single sided discs v double sided on Hone.

    A question: brand new kitchen knives I've bought that cut very well appear to my eyes to have a residual grinding pattern of micro lines in their edge perpendicular to the main axis of the blade. They don't seem to have a burr (fingernail check is silent). Although the lines are tinier than would be on an intentionally purchased serrated knife, wouldn't any such knife get sharper by removing those lines with the alternating strokes at the correct angle as in your video? Would you immediately treat such a knife upon purchase? or just incorporate treatment with each normal use?

      The line patterns are probably from deburring or the final honing. The pattern on the side will always be present and unless its something more than just a visual surface patter, I don’t thing it will make any perceivable difference.
      The rolling diamond sharpeners will change the pattern to a criss cross looking one even when the knife is honed and stropped. However serrated knives need to be sharpened differently. They are sharpened usually with very thin wheel a split belt which they do not move back and forth but rather hold perpendicular to the blade edge thus those straight lines. I wouldn’t use a rolling sharpener on that unless the serrations were so tight there was essentially no spaces to get between.

    Another great demo, BUT I am now leaning AWAY from the HONE. At $100 I was in, now the additional $140 for the "Pro Kit" and how much more $ for the multi angle kit? I'm assuming the WHOLE ball of was is gonna be in the $300 range? This is DEFINITELY pushing me in the direction of the Work Sharp Roller! It includes multi angle, multiple disks (3) for $120...QUITE A DIFFERENCE. Even if I have to buy another disk in the future & a strop I'll likely be at HALF the price of HONE.
    IMO a $300 price point is not going to attract home cooks & novice sharpeners.

      Definitely a personal choice. I have no skin in the game on HONE sales. There is a 20% discount code they had for UKULELEJAYBBQ but not sure how long they will leave it. I know it was working this week as folks sent me a note saying it worked. You should do what you're comfortable with for sure. Have no idea when or what discs or cost Work Sharp will have or if they will even come out with an entire line like HONE is building. I guess time will tell. Appreciate your comment and enjoy your sharpening with whatever you get. Cheers!

      The build quality appears to be top notch but maybe its just not for value conscious consumers like me?
      Here is my situation which I'm sure is not unique: home cook needs something relatively easy that will get me back to a factory edge (or better) once/twice per year. I have a handful of knives in my kitchen. I am not a hunter or knife collector with 50 knives to maintain & re-profile.
      How about a basic package that allows me the ability to sharpen 15°, 20°, 25° (kitchen knives, pocket knives) & 4 different grit on 2 discs. Sell for under $140. This would last me several years if I sharpen 6 knives twice per year.
      Once I learn which grit I use most buying a double sided disc would be nice as a replacement option. Strop should be sold separately.
      If I'm thinking of spending more than $140 then I'd prob go with a Work Sharp Ken Onion electric tool sharpener. I'd learn how to use it on a couple knifes I don't care about and live happily ever after.

      Double razor sharp. BESS scale 2000 is a butter knife and I sharpen to 100-150 which is beyond double razor sharp.

    Thanks for the video. Will the multi-angle setup be an add-on or an entirely different sharpener? I was looking at ordering and see that the current option is a pre-order shipping mid Jan. Should I wait for a new version or go ahead and bite and plan on an add-on kit?

    First, thanks for your videos - they are really educational. Despite having placed a pre-order for the Hone base set based upon your prior video about it, it's really disappointing that the "pro" kit doesn't include alternate sharpening angles (at *least* a 17 degree adapter option) and makes it a sub-par value and a pass for the price point for me.
    Also, I feel Hone really should have considered more than two angles to come standard, since what I feel is their prime competitor in the Work Sharp roller comes standard with 4 angles with no additional cost required. I like Hone's design and build better than the Work Sharp, which is why I pre-ordered it instead of getting the Work Sharp, but cost is a real factor for me, and many others I suspect, when you start needing add-ons to cover what is a pretty common angle (17) and I admit that I'm feeling some buyer's remorse after placing my order knowing that I'll need to invest more.

      Hi there. I can appreciate your feelings. I think like every product, evolution is a challenge to think of everything and like my last computer, I was upset as a month laster they came out with something I wanted but it’s too last. If they never announced new things then then companies would be seen as not innovative and forward thinking. It’s a no win situation just like Work Sharp who I love, I got the Precison Adjust Elite and them a month later the Pro came out and people were upset they didn’t know or they would of waited. Every company is in that position when they announce something new. I think it’s human nature to feel that way and it’s a valid feeling I think we have all experienced buying something.

      @@UkuleleJayBBQ I hear you - since the Work Sharp was out first, I was thinking that Hone could have seen the comparison coming, but then Hone's product design and manufacturing may have actually predated Work Sharp's release and made that impossible. I guess we'll see what kind.of price point the extra angle option(s) is.

      Just wanted to highlight that it was intentional to provide small knife slots on two sides and not provide two additional angles on the Knife Holder. We believe that small knife option is critical for our users. Our HONE AngleMate will be launched on our website in about 2 weeks at a very affordable price. It will allow 8 additional angle options (including 17 degrees) separately for big and small knives using the Knife Holder that comes with the HONE Knife Sharpener. We still believe that HONE knife sharpening system is offering the best value and functionality for the money. Also, please don’t forget to appreciate double sided diamond discs and our much superior #3000 Ceramic Disc which should last forever. In addition, knife stability during sharpening is unmatched due to much bigger and stronger magnets and bigger back support. Sharpening process is completely useless if the knife is not rock solid during the sharpening process. Even a slight movement during the sharpening process will not result in a perfect edge.     Where is the HONE made? What the hole in the middle of the discs for?

      My last update this week was about 2 weeks out for manufacturing to get done. Of course all subject to change but they have been very close on their release dates with me on all new releases so far.

    9:16 wtf are you looking at there? If you see anything with naked eyes your edge is damaged. You don't look at it with your eyes, you are suppose to feel it with your nails and fingers. The only time you will be looking at your edge is to check the bevel is straight and leveled.
