@@PlatinumHustle HMS Rose was built in 1970, from British Admiralty plans from the 18th century, in Lunenburg, Nova Scotia, about an hour's drive from where I live. It was this ship that was used for HMS Surprise. You see how those cannon are up on platforms? There's two problems there: 1. Not wide enough for the guns to recoil, and 2. Those platforms are the original deck level. The US Coast Guard requires a certain amount of headroom below decks, so inboard from the guns, they lowered the deck.
This seems strange to me. Tiller ropes are not rigged, her gaff boom is missing, yet the topmasts are not sent down. odd. Oh..and BTW - ships bread was never infested with "maggots." Maggots (fly larvae) eat meat. Bread is infested with weevils; a point made when (in the movie) Capt. Jack hits the Doctor with his "lesser of two weevils" joke.
Sadly, however, below decks she is just a Hollywood ship... I was much disappointed... The San Diego Maratime museum is exceptional however... The Aussie immigrant ship "Euterpe /// Star of India" an iron hulled Barque built in 1864? on Isle of Man, England is an operational sailing vessel !! maybe even the last of her kind...
This ship is a bit too altered from its original project, but being a modern ship, I guess it has to obey the rules applied to modern ships. Which is a shame.

I was wondering, that doesn't look like a gun deck to me...
I believe they've had to meet modern day height requirements below decks hence the "stages" which I think were set to the original height.
