Those cherries look underripe. Is that when you’re supposed to harvest?

Good observation! Most Coffee Cherries, including the standard variety, Coffea arabica, turn red when they are fully ripe, however this particular variety is a Yellow Cherry Coffee plant, so they are fully ripe at this stage with this yellow color. We grow several unusual coffee varieties here at Logee's! Thank you!
