This reminds me of the chicken enchiladas my grandma made. Awesome. She added a can of cream of chicken soup along with everything else. Adds a great flavor

I’m 6’3” and Malcolm had me looking like him. Hit the keto and now I’m 210lbs. But got to eat!! You can take this recipe-lose the tortillas!! Go to deli section and have them slice your favorite meat pretty thin. I use chicken. Then do just like he did. Wrap filling in meat tortilla. Everything else is keto friendly. Can use turkey, ham, chicken, even salami or bologna if that’s what you like. I can’t eat everything that Malcolm cooks these days. But I can damn sure use his great ideas with some minor modifications to eat like a king 👑
Made this yesterday, 02 May. Yummy! I cook with gas on a Weber. Temp control is a challenge, but using a Bluetooth grate level thermometer helps. It took an hour + 43 min to cook the bird, a big roaster. I use a stainless pouch to smoke chips. It works. The sauce is straight forward per recipe and very good. I made a rub from allrecipes.com. I did not fry the tortillas, just rolled them out of the package. Baked the completed dish at 350 for 25 min. Wow! I'll do this again. I have enough smoked chicken leftover for pizza tonight. I'll make a small batch of the white sauce for the base, it is that good. Thanks, Malcom
Awesome recipe! I make something like this and make a cheese sauce that is only a block pepper jack, block of cream cheese and a can of diced green chilis. Super easy sauce that's very good!

If you dip each tortilla in a bowl of water and then cook in a hot nonstick frypan for 30 seconds, flipping in between, you come away with a tortilla that’s just as pliable as if you do when dip it in oil. Given how rich the dish is already, this might lighten it up a little bit. Thanks for another great recipe.

We made these amazing enchiladas for dinner. Few minor variations but generally followed the recipe. Awesome flavor. Been watching your cooking for a while now and have tried many. Always a great meal. Sorry haven't commented before but always good stuff. Keep it up !!!
