Hey Bim! I think the reason for the 'head' when coffee is added is because the semi-dissolved coffee particles are causing the dissolved CO2 to come out of solution by giving it a place to anchor itself (sort of like acting as a catalyst)
It's the increased surface area. I'm pretty confident that it's the same effect seen with Mentos. There's thousands of small divots in a Mentos, and that gives the CO2 a place to "anchor and escape". The reason the reaction is smaller with instant coffee might be that it dissolves too fast.

Actually there is a fizzy water and coffee drink that’s sometimes sold in coffeeshops, called espresso tonic. It’s fantastic as long as barista knows what they’re doing with their espresso and don’t use schweppes tonic. The downside is it tends to hit quite hard (something to do with oral absorption I presume but not quite sure don’t quote me on that). Also, coke + instant coffee mix is student’s “all-nighter” drink in some countries, so not sure how popular it is in UK

Inspired by this video, I immediately poured some Dandelion and Burdock into a glass, added a teaspoon of coffee (in-date, I'm afraid), and stirred. I can happily confirm it is one of the worst things I've ever put into my mouth, and I've had some questionable friday nights, which I regretted within an instant. Not only did my stomach churn at the foul concoction I'd just forced it to gurgle, but I can _feel_ the taste of it in the back of my mouth. It's much alike how I imagine it would feel to walk into the remains of reactor 4 and hold a chunk of the elephant's foot in the back of one's throat.
I didn't even look, so here goes anyway: The reason the coffee makes it froth is the same reason Mentos does. It's the granular nature of the the dry coffee that gives the dissolved gasses a place to attach and release from suspension. Added to that is (probably) the frothing agents in the coffee itself. I'm unsure of that, not knowing how UK instant coffee may differ from US
The only thing is that the drink still frothed even after the coffee had been made up with water & the granules dissolved before it was added to the pop, so that would suggest that that it's not the granules themselves causing the frothing (perhaps a chemical reaction instead ????) & no, UK instant coffee (assuming it's just "plain" instant coffee which it looked like that jar was) doesn't have any "frothing" agents.

Coca Cola makes a coke with coffee soft drink. It even comes in dark roast or vanilla. But, while looking this up I noticed that Coca Cola also makes a Quebec Maple (syrup) cola soft drink. I'm not sure that is something I'd want to try.
I suppose the frothiness once you add the coffee is due to the high surface area of the coffee granules, allowing the CO2 to have a greater area of effect to fizz, much like it does when you pour fizzy drinks into an old scratched glass.
My local coffee shop in downtown Huntsville Alabama offers an 'Americola', an espresso shot with a can of coke, rather than water, added after the espresso brew. It's actually quite a lovely treat every now and again!

I'm no food scientist, (though I am a distiller so recipe/product development is a thing I deal with on a near-daily basis) but I can personally attest to Coke with coffee being a thing here in the US and it IS rather tasty. It's becoming easier to find in the stores locally, too. Of all the drinks you have up there to pair with coffee, I think Coca-Cola or Pepsi would be the best two, just going off of their base flavours and the ingredients used. Dr. Pepper might well work, but being as it's advertised as having 23 flavours involved in it, I don't know how well the coffee would play out or come through.
They used to advertise to make Dr Pepper hot during the holidays. You heat the soda to 180 degrees then pour it over a thin slice of lemon (thin is key the lemon can become overpowering quickly) before enjoying. Maybe nix the lemon and try to make a hot coffee Dr pepper.

My question is, since your idea was to grow "beer" in that plot of land, Have you grown "beer" there and if so, will that be used to brew beer and served in your pub? We did that when I was a young teen and we went to dinner to a pizzeria with buddies. But we also mixed in leftover chips, mayo, ketchup and the occasional olive or artichoke piece from a quattro stagioni. We’d each tip 1000 lire and give all to the guy who dared to drink it.

In the southeastern portion of the US I’d say many viewers that were born in the 90’s would know mixing all of the sodas available at the soda fountain as a “suicide”. It was my favorite after baseball game treat growing up.
I'm from NorthEastern US (PA), and yeah, I grew up mostly in the 90s and we called a mix of drinks like this a Suicide as well. Everyone after a baseball game would run to the concession stand and get this because we all got a free drink after the game
I used to do so similar when I went on holiday at an all inclusive hotel in Spain/Majorca when I was like 6 as they let you free reign of the dispensers (and who doesn't love sugar?). Coke + Fanta Orange + Fanta Lemon + Sprite all together is actually surprisingly nice. I've never been on an all inclusive as an adult, that would probably be quite dangerous adding alcohol to the mix 🤣

For some years San Franciscan coffee bars have been offering the delightful and refreshing espresso shot in tonic water, a spoonful (equivalent) of agave, then poured over ice. Perfect for the heat.

Cold brew plus tonic water tastes amazing and is really refreshing!

At one point they did sell specific kettles for heating up Dr Pepper as it was kind of marketed like mulled wine or ribena, since it's primaril carbonated, spiced prune juice.
I got this big pack of "sparkling coffee" from this shop that sells discount products and let me tell you... I understand why it was at that shop.
It was disgusting.
For some years San Franciscan coffee bars have been offering the delightful and refreshing espresso shot in tonic water, a spoonful (equivalent) of agave, then poured over ice. Perfect for the heat.

Mountain Dew can have pulp as well, though usually more in the cane sugar, glass bottle stuff they only make at some regional bottlers in the states.
