    Our Recipe:
    3 lbs chicken thighs (or other cuts as preferred)
    4-6 large golden potato, cut into 1-2 inch pieces
    2 Tbsp vegetable oil
    6-10 pieces garlic, crushed and chopped
    1 medium onion chopped
    3/4 cup Soy Sauce
    3/4 cup white vinegar
    4-5 pieces bay leaf
    1 tsp fresh cracked black pepper
    2 cups rice wash or water
    For the marinade:
    1 whole bulb garlic, crushed and chopped
    1/2 cup soy sauce
    Combine ingredients for marinade, and mix with chicken in a bowl or plastic bag. Marinate for at least 2 hrs in the refrigerator.
    Before cooking, drain marinade from chicken and reserve remaining marinade for later use
    Heat pan over medium low heat
    Saute garlic until light brown and, adjust heat as necessary to avoid burning garlic
    Add Onions and sauté 2-3 until softened
    Add black pepper and bay leaves
    Increase heat to medium and add chicken
    Cook chicken, allowing sides to brown and fat to render from chicken
    Add the remaining marinade, soy sauce, vinegar, and rice wash or water
    Bring to a boil and then cover and reduce heat to a simmer for 15 minutes.
    Add potatoes and simmer another 10-15 minutes, until potatoes are easily pierced with a fork
    Serve over freshly cooked rice
