Dry Pigeon Peas And Rice (vegetarian)

- Learn how to make pigeon peas and rice (vegetarian and gluten free) in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com A classic rice dish made with dried pigeon peas, simmered in herb infused coconut milk, it's a delightful one-pot dish.
Based on a traditional rice and peas rice my grandmother would make, but we're doing it fully vegetarian as her recipe would include salted meats.
You'll Need...
1 cup dried pigeon peas
3 cups parboil brown rice (washed)
1 tablespoon olive oil (coconut oil works great)
1/2 medium onion diced
4 sprigs thyme
1/4 teaspoon black pepper
2 scallions (chopped)
1/4 scotch bonnet pepper (see note below)
1/4 teaspoon ground allspice
1 1/2 cup coconut milk
2 cups water (divided)
3/4 teaspoon salt (adjust)
Optional ingredients
2 cloves garlic
slice of ginger

I thought it was just me! I used to be so scared of pressure cookers, but I got one as a gift that is so easy to use and doesn't make any crazy noises. Ask a vegan to post vids. One reason I watch is I wanr to retake my culinary heritage and that involves meat. Maybe you could get creative and play with recipes and come up with vegan versions of them. Its really not hard.

Yes Chris cool. Made a trini pelau - of course I used the dried pigeon peas and pressure cooked after soaking overight to cut down cooking time. You can add ochro and pumpkin to the vegetarian version....yummy

I can't find the pigeon peas anywhere in Toledo, Oh. I wanted to try them out, packed full of minerals and this recipe looks great.
I like this better than the Bahamian version.
Made this tonight and have to say it was good. Only problem with just me and my wife is it's a lot of food. Think it will make a good breakfast though. Just add some raisins, cinnamon and a little brown sugar if you would like. Could eat just as it is though. Thanks Chris.

So i used the dry pigeon peas from the can, whole can coconut milk, water (not sure how much). This is my first time making this.. mine seems to be kinda creamy and not on the drier side.

I was making peas and rice the other day trying to remember my Dad's recipe(without calling him, lol)and thinking I'm missing a particular spice...allspice. I don't recall Dad using coconut milk, guess I'll have to ask...love your accent, my Dad is from T'dad.
My Italian neighbor's traditional dishes are very similar to the ones I grew up with and fry bake is similar to fry bannock, funny how us humans think we are all different and our food is the same.

What is the difference between the thyme you used and the broad leaf thyme? That is the one I have growing on my windowsill.

Popie Mac Parboil is the type of rice just like long grain or brown rice.

Where can I get all spice from?
Have no fear, try an electric pressure cooker. I have several, in my search for the one that works best for my needs. Cuisinart has a good one, (inexpensive) the top is easy to put in place, and with a little practice ( practice using water) you'll get the pressure thing placed so the steam won't escape. Following the instructions will give you an idea of how much timing you'll need for whatever. ONCE YOU USE ONE, YOU'LL LOVE IT. ( I hate using this term, SET IT AND FORGET IT, but you will). Maybe one of the companies will send you one, you'll love it.

gunguh peas and pigeon peas is the same thing. Different name for same thing.
what is the difference between par boiled and regular rice ?
Par boiled is like Uncle Ben's
from wiki:The complete grain of rice is soaked, steamed and dried, then the hull is removed to make parboiled rice. The steaming enables the rice to absorb nutrients and changes the starch so that it cooks into a firmer, less sticky dish of rice than regular white rice.
