    Ingredients:
    6 eggs (I used medium)
    300ml full fat milk
260g plain or all purpose flour
    goose/duck or beef dripping preferably
    (I used lard)
    Preheat Airfryer 180c (oven: 180c/350f/gas mark 4)
Place milk and eggs into a large mixing bowl and whisk together. Sift the flour and mix with a hand blender until you've got a smooth batter. Leave to stand for at least 10 minutes - I left it for 30mins
In containers (I used b&m pudding basins) pop goose or duck fat or beef dripping (or vegetable oil)
Pop containers into the airfryer and preheat for 10 mins until oil very hot. Season just before pouring into containers (if seasoned too early, the salt can affect the rise) fill up the moulds to 2/3s full.
on AIRFRY setting ( I used BAKE which I felt was too gentle) 180c/350f 30mins approx, you may need to flip and cook the bottoms for further 5 mins

Had so many years of making them now, I make the batter by eye, but in the past I used to use a small mug and use that as a measure ie the same volume of every ingredient. I usually make the batter first thing and keep it in the fridge, plus it's important not to over mix it or it can build up the gluten and they can get tough.
    These look perfect!

Hi Kerry look fantastic, you really need to try using beef dripping I get mine from the butcher it comes in solid form in a tub ,use it same as lard, I also use it to Cook my roasties and homemade chips . Where I come from ( Wolverhampton) the chippies used to cook in beef dripping, no taste like it, not good all the time though lol x

I use my air fryer oven similar to yours but a Tower and my recipe for yorkies is 1 ramekin of plain flour, 1 ramekin of semi skimmed milk and 1 ramekin of eggs, I put on 200 for about 20 mins. This is from a yorkshire chef and as I’m a Yorkshire woman I tried it and never looked back they’re whoppers x

Yeah the oven recipe I always heard good things about was using leftover fat or whatever from usually pork or turkey because it would be a sunday roast or for Christmas dinner but never tried it with duck or goose but even though it says it ideal it seems unlikely for your normal roast. I agree because I've heard it myself which was when they're in the oven to rise, don't open it. Definitely going to try it in air fryer and play around with the recipe to get them just right. Thanks for this

So, ifyou were to try a Toad in the hole, would you cook the sausages first or just put uncooked in the batter mix?

    • @budgetcookinguk
      @budgetcookinguk  2 місяці тому +1

I would cook the sausages first, at least lightly brown them to get started, then add the batter for last 10/15 minutes or however long it takes - so they continue cooking along with the batter😀👍👍

Hiya, Everybody has their own particular takes on pudding mix. For instance I put mixed herbs sage and onion in mine but that call for a bit more variation and experimentation. So with the ultimate respect try and get the puddings the same shape of your tin and fill the middle of the yorkie with the gravy. Traditionaly a bigger Yorkie would have had the dinner inside it. Methinks you are overfilling the tins. Perhaps about a third or just cover the bottom. However as I said , each to their own. Keep Cooking.

They are so big because they are in deep tins not because of the batter. I'm sure a four egg mix would come out just as big because of the extra batter in those tins.lots of people like a slightly eggy centre to their yorkshires, they aren't meant to be crispy shells so I think your yours were just fine.My hubby is more keen on using an airfryer than me so I think he'll be giving it a go.
