The bigger cams open sooner and close later allowing for maximum air intake and exhaust flow at high RPMs. This is why they're found on performance cars and race cars and not stock cars. At lower RPMs these engines are prematurely opening valves and closing them too late causing the sputtering and popping sound
Rey Luque big cam profiles open the valves higher and/or longer to let more air in and out of each intake and exhaust stroke. More air, more power. Hence the throaty sound.
