Earnshaw's theorem isn't really applicable here, and there is an equilibrium configuraration. Earnshaw's theorem applies to point-charges without the influence of any other external forces. In this case however there is gravity and the force that the table exerts on the magnet and with those you can put those two magnets in equilibrium by _perfectly_ aligning them. However this is not a stable equilibrium, but collapses on slight pertubations which is why this configuration isn't stable in practise. This is still considered an equilibrium though.

Er that's exactly what Earnshaw's theorem states.
You need a structure to prevent the upper magnet from flipping over such as a rod running through a hole in the magnet. The company I worked for made maglev by suspending the electromagnet above the one to be levitated and using a sensor that gave position feedback so the force could be varied to keep the object levitated at a given height. There was also a circuit to dampen the oscillation.

Earnshaw's theorem only applies to the static situation, a spinning magnet can be made to hover in mid air over another magnet, a toy demonstrating this effect is sold.
Using AC and a coil of wire, a demo in college was able to levitate AL doughnuts. A strong pulsed magnetic field from a coil will also launch non-ferrous metals at moderate velocities.

A simple magnet would not work.
But a compound magnet might do the job.
Put 10 small magnet around a bigger magnet.
Arrange the magnet to repel the 10 small magnet so it levitates and use the attraction of the center magnet to hold it in equilibrium position.
I once inserted 2 long magnets into a pyrex pipe that was installed vertically. Levitation may occur. Pyrex pipes as rails for both magnets to keep them from scrambling.
You could also just use a tube that barely fits the magnets. A clear one would be best for the video.

I'm going to have to try something, but I feel like you could do that with 2 magnets and not need that electro magnet. (However, screw that. Electromagnet are cool for other reasons.)
Those small Chinese electromagnets don't work very well for magnetic levitation (probably because the field doesn't extend very far and the levitating magnet is attracted to the metal at too close of a distance. I have made one work though, but only with an extremely fast feedback loop.

So what? We can use an electromagnet and it will still fall off. Unless you have more magnets on other axes that you could use to counteract all random tilts.
This video isn"t exactly true. There is a spot where a properly designed magnet could levitate indefinitely. The reason we can't do it is for two reasons.
1) The point where the mangets levitate is unstable. Because the attraction force from the other side is more desireable as it creates a stable resting point.
2) Most magnets dont have a perfectly allligned magnetic field, this means that you may have 2 or more points from which the magnet attracts or repells, this significantly reduses or elimates alltogether the point where the magnet can levitate indefinitely.
The indefinate levitation has been done before, and we could do it again. The issue is that the smallest force can easily offset the magnets resulting in them falling to a more stable rest. Something as small as a micro earthquake could disturb an equilibrium with levitating permanent magnets.
An experiment you can do at home, is take pretty much any magnet, then take some magnetic field sensitive paper. And take a picture of the field. Then attract some other magnets to it. I did this with sone n52 magnet blocks with a pull force of 50lbs. The n52 is suposed to be permanent until heated, however the shape of the field changes from the interaction with other magnets. The pull force remained roughly the same, only the field shape changed. Interactions like this would greatly conplicate any attempt at magnetic levitation.

Earnshaw's theorem still applies because you are using the electromagnet the same as a permanent magnet. This video is a lie and I'm ashamed for you.
you missed the point that he is turning the electromagnet on and off, and that he relying on attraction in stead of repulsion. Ie, you turn off the electromagnet when the permanent magnet floats above a certain point and on when it sinks below.
The problem is that the magnet is inducing a twisting motion in the em field. To hold position in space you’d need to rotate the magnet mechanically to match the rate of torsion to create a “standing wave” as it were.
Or cooling it down would work
