If you’re going to make a pan sauce I recommend skipping the butter baste and adding the butter later when the sauce stops simmering, that way you get a luscious emulsion instead of a broken greasy sauce. Both versions will taste good, but texture is very important when dealing with delicate meat like scallops.
Recipe doesn’t distinguish between “wet” and “dry” scallops. It’s not just a matter of putting “wet” scallops on a paper towel, but “wet” scallops have a preservative ingredient (sodium tripolyphosphate) which also adds to their water content. Ask fishmonger if scallops are wet or dry. If s/he doesn’t know, then they’re probably wet scallops. In order to remove this preservative, must first soak scallops in a quart of cold water, 1/4 cup lemon juice and 2 tbsp of salt for 30 minutes, remove them from this solution and THEN add some salt to scallops and dry with a paper towel. This is the only way to get those deliciously seared scallops.
Wow quick recipe. Can’t wait to make this for my husband. He loves all seafood, but for some reason I always screw up the scallops. Thanks Matt for such a delicious looking dish. You never disappoint. Love your seasonings. I keep a lot on hand. I don’t want to run out. Can’t wait to buy your knife.
I made this for my boyfriend and he LOOOVED it! We make them all the time now. The white wine sauce is out of this world! It brings an already amazing scallop to another level!
I saw this recipe a year ago and didn't make it because scallops are so expensive. I just saw it again and still haven't, will let you know next year, wish me luck 😂
I like scallops but I'm a huge fan of the baby scallops. They have a better flavor (my opinion). Plus when making a multi seafood dish the smaller ones play better with their other friends from the sea 😄. I'm definitely making this sauce 😋
You should try making bacon wrapped scallops. I tried em once at a seafood place and I swear to God they must dust those things with Crack they were so good
These were soooo good! I didn’t have wine so I used 1/4cup broth (1/4tsp each better than bullion garlic and roasted vegetable mixed) and 1/4 onion instead of shallot. The best scallops ever! ✨💫
Just went to a local place called Trapper's and got blackened tilapia, shrimp, scallops and dirty rice. My first time trying scallops. Everything was delicious. Oh, also got a half dozen oysters on half shell. Everything was so fresh. Now I can't wait to try making these scallops myself! 😍😍😍
I’ve just did it I’ve had cooking 🥘 🧑🍳 wine 🍷 but everything else I’ve had my wife all Italian said omg that’s good i just need bigger scallops I’ve had the small one and I’m getting your all purpose seasoning soon
I'm in the hospital on a liquid diet, when I tell you your scallops looks so dog on good I can only wish I could have me some solid food....I'm torturing myself watching your videos and the food network..lol I love scallops❤
As much as it looks good and sounds good I hope all the chefs out there like myself can agree that a lot of the things he did in this video when it comes to Culinary techniques is quite stupid. Hint: oil, seasoning, time, temperature, and color.
A proper amount of butter when cooked with scallops (ive been cooking them for 30 years) is in no way unhealthy. Its actually almost a perfect amount of fat and protein when done correctly. In fact, my favorite scallop recipe is scallops straight off the dock and browned butter.
Looks great. Pro tip with scallops: do not pre salt them because they become little salt pucks if you season them like you would a steak or chicken breast, etc. Let the sauce be the salty addition to bring our the full flavor.
They look great but I got horribly sick from eating scallops 20 years ago and I can't even look at them. I hope it changes. It was at a really nice restaurant and didn't take me a half an hour to lose everything I ate horrifying.
Bro you do your thing I the kitchen, but why all you recipes look the same? I matter what u cook, u do the same to everything but call it something else.😂
Another key to a good scallop is buy "dry packed" scallops- not packed with water and chemicals. Then make sure to pat them dry before cooking! Yum! Love scallops! Quick cooking so they make for an easy dinner! 😋 👍

2-3 minutes per side? That’s overcooked af. Given, you’re probably American and have never actually had fresh scallops harvested day-of.
I’ve never ever cooked scallops, but this makes me want to. Looking good to me.
I did one time and it didn't look this good 😂😂
2-3 minutes ON EACH SIDE will make it rubbery in texture
@@gssidhu8264 how many minutes would you suggest?
@@CupcakeBeauty24 in my experience 2-3 minutes TOTAL cooking time gives best results depending on size of scallops and cooking temperature.
How does it taste ? am planning to try for first time
I haven't had scallops in years. Getting some this week bc of this video! Thank you!
I love his deliverance and how he just talking about the food and not tryna be somebodys motivational speaker to boost ya confidence.
Agree. I have to mute all that drama away. Very annoying. Love this guy!!

I’m new to making scallops. I will def ask when I’m at the seafood section again. Thanks!
Great piece of information - I had no idea
Overcooked. 2-3 mins on a smoking cast iron before flipping? Rubbery
Did you hear me salivating? The drool factor is for real on this scallop dish! Thanks again Matt, for yet another fabulous recipe.
High likeability reply. Genuine. Authentic. Good A/V. There are few ambient location distractions.

Step 1, hold a bank heist to afford scallops…… 😂
Great one🤣🤣
I'm going to try preparing some scallops this way, and I hope to have a good time!🤗😷🕊
And you get chewy horrible scallops. 👍
Written recipe is too darn hard to find including looking on utube! There has to be an easier way!!!!
You can find the recipe on his Instagram under the same name!!
Should start basting right after scallops are flipped or they will be overcooked and tough.

U Should clean your scallops before cooking next time
“Look!!! They’re rubber”
Looks awesome but you should add tarragon also then perfection
Hi, about to cook some lobster for the first time. Could I apply this same recipe or do you have a one better suited to that crustacean?
This might be really good for keto. I might substitute the wine for something else
2-3 minutes per side!? Scallops should only go ~90 seconds
❤didn't know I was supposed to add wine directly in my stomach😅😅
I dont drink wine, what kind is recommended for cooking? Or whats an alternative to wine?
The sause and seasoning look good, but damn 4 minutes on each side. Those things must be chewy as a leather boot.
And serve over pasta-done.

Need to actually give actual explicit instructions tho. No temp
