How to tell if your sourdough is proofed
Переглядів 99 тис.3 роки тому
Sourdough proofing can be tricky until you get the hang of it. If you want to know how to tell if your sourdough is proofed you can do a simple poke test. If you poke it and it bounces back quickly, it needs more time. If you poke it and it leaves a dent, or your dough starts to deflate, it has over proofed. If you poke it and it comes back nice a slowly leaving only a slight indentation, it's ...

How to make butter in a food processor
Great video. Thank you for making this. My wife started making homemade bread, so I wanted to make butter to compliment it. This video was so helpful!
No butter? Heavy cream has enough fat?
Yes and it's much easier than rubbing butter into the flour. 😊
When boost feeding, do you add 100g flour and water too the previous mix or do you just use a tablespoon starter each time. Like say after taking a Tbs”dead” starter and mixing with water and flour do you the after 12 h take a Tbs of that mix and do the same?
Great video. I really liked the clear instructions and demonstration. Well done!
Thank you 🙏
Pour the cream into the small mixing bowl so you get it all out
So it doesn’t have to rise? Thx for the recipe!
The discard in this recipe is just for flavouring and not used to rise the scones 😊
How much whiskey & cream do u use plz ? Xx
Hi there. The ingredients are Ingredients 300ml heavy cream 395g can of sweetened condensed milk 1/2 teaspoon unsweetened cocoa powder 1 teaspoon instant coffee granules 1 teaspoon vanilla extract 340ml Irish whiskey (I used Tullamore Dew)
I love Five Farms Country Cork Irish cream
i ❤ my nan ❤❤❤❤❤❤
Aww...I love you too ❤❤❤
my grandmother made something like this at Christmas. she would take gelatin added to instant coffee and let it in small cups then add the this eggwhite with sugar ( she used a double boiler)...she would top the cold jello with it and then top it with real whipped cream. the middle layer would browm a little maybe from absorbing the coffee jello. ive tried to make it a few times. i found her double boiler...and realized i need to let the jello set uo first. this was awesome to see!!! im going to try again this Christmas. fingers crossed. it was a family tradition we haven't enjoyed since she passed
What a lovely memory. I hope you love the recipe. 💗

Thank you for your excellent instruction. I've just made my first loaf, and of course do not have all the fancy accessories. But this method worked beautifully. Also, I didn't have rice flour on hand, but thanks to your explanation, I used corn cornflour successfully.😊
I'm so glad you found my video helpful 😊
What was in the spray to get rid of the bubbles? Thanks for this. I've always wanted to give it a go, but didn't know where to start.
Hi, it's isoproply (rubbing alcohol). You can get it from chemists. Here is the link with more details so you can have a go. 😊 www.littleriverkitchen.com.au/blog/melt-pour-soap
Looks good but a tip…once you’ve cut the scones out, turn them over when placing on the baking tray (so the bottom of the scone becomes the top). That way they all rise even
Thanks...I'll definitely give that a try 😊
Not sure what these comments are getting at, I could totally see the second loaf pop back quickly! It’s a good test!
Thank you. I'm glad it helped 😊
Thanks, I never tried this. I was just wondering what is butterscotch so I found this video and on weekend I must try this 😋👍 looks very delicious :)
I hope you like it 😊
Can you revive a sourdough starter with this method right out of the refrigerator? Or does the super hungry starter need to warm up before you stir the black liquid in and feed it again?
If your starter looks like this then you'd need to toss most of it and only keep a tablespoon so if its cold it wont make any difference. Just feed it and get it going again straight out of the fridge. Good luck.
Looks nice, I'll try making it
Hope you like them 😊

Amaretto or almond extract instead of vanilla for a more authentic taste
Nice 👍👍👍😱😱💯💯👌💐
Replace the vanilla with almond extract. It is also helpful when you are making a recipe video to include the measurements of the ingredients.
If you click the 'more' button under the video you'll see the ingredient measurements...but it sounds like you already know how to make it.
Welp i tried it... Success 🎉

Shoud we put the egg whites in the milk while milk is still hot or should we wait until it becomes room temperature ?
hi there, you whisk the egg whites after the milk has heated and had the other ingredients added. It cools slightly while you're whisking the egg whites. The link to the full recipe is here www.littleriverkitchen.com.au/blog/spanish-cream

Can you put a video up from start to finish of making sd bread? I also need to know what utensils I need. I’m making it for probiotic effects.
There are no live probiotics in sourdough after baking it. Sourdough is thought to be better than regular white bread for gut health though. Sourdough breads nutrients are more bioavailabile due to the breakdown of these nutrients when fermenting. It also has a lower glycemic index than regular white bread. If you want the pre/probiotics eat yogurt, kimchee, and other fermented but not cooked foods.
Ok, I know this is a stupid question. But... i can’t find heavy cream in my supermarket. Aside from the dolloping creams, which look much thicker than yours, there’s pouring cream, pure cream, thickened cream, and cooking cream. No heavy cream. Help?
Hi there. Thickened cream will work fine 😊
@@LittleRiverKitchenthanks, I’m planning to make this next week. Just so I can get the recipe sampled and perfected by Christmas 😉
Use half and half. A little lighter texture but super smooth. I also add a little almond extract or 2 or 3 oz of amaretto.
Ok ok so what do I use instead of the cap? Fold the towel over?
You can place the dough inside a plastic bag 😊
Just put the whole thing inside a clean garbage bag or a big zip loc bag
