SILKY HK Style Congee (MEATBALLS) - The Tipsy Cookery
One of Hong Kong’s FAVOURITE breakfast food is the legendary CONGEE! It is a staple in Asian cuisine! Originally, this dish was created to stretch meal with the limited amount of rice for poorer families, but it has since exploded into a POPULAR favourite with different variations and flavours! They even have sweet congee if you can believe it!
I love it when congee is soft and silky, kind of like a warm blanket for your stomach. I’ve combined a simple pork meatball recipe with the simple congee. Traditionally, the pork meatballs are a lot bouncier. The bouncy texture is created by “dat” the ground meats, a process in which the chef would pick up the meat and throw it into a metal bowl repeatedly until the ground meat turns into a paste like consistency. By doing this process, the meatballs have a bouncier mouth-feel when cooked. I kept it simple in my recipe, so my meatballs are much more soft and pillowy (which I’m a bigger fan of)
The quintessential congee would be silky but with some of the rice grains still intact. You can soak the rice (after its been washed) for an hour before cooking it to reduce the cook time by half. Using a metal whisk to break up some of the rice grains is a quick way to create that smooth texture. Alternatively, you can cook it for an extra 10-15 minutes.
Top the congee with whatever you like, I chose to use century egg (which if you haven’t tried it before, it is a MUST), green onion, ginger, preserved bamboo shoots and preserved radish. You can add salted duck egg, cilantro, pork floss… the options are endless!

Recipe:
- 1/2 Cup Long-grain Rice
- 6 Cups water
- Ground Pork
- 1 tsp Mushroom Seasoning
- 1.5 tbsp Water
- 1 tbsp Corn Starch
- 1.5 tsp Oyster Sauce
- 1 tsp Salt
- Green Onion
- Century Egg
- Ginger
- Preserved Bamboo Shoots and Radish
- Dash of White Pepper
We brewed our own beer this time! It was dark, malty with a slight sweetness. Absolutely LOVED this one! We did an All Grain recipe with the BIAB (Brew In A Bag) method!

    Miso ramen NEVER has ground pork and sugar.This one on the video looks delicious.....but IS NOT A MISO RAMEN!!!

      Once you're done sous vide, take it out of the bag and take the net off. Then sear the outside on a hot pan for some color and crispiness. Hope this helps! 😉
