- Half a dozen Kumamoto oysters
Garlic butter Sauce
- 6 tbsp butter
- 3 tbsp extra virgin olive oil
- 3 tbsp finely minced garlic
-Salt and pepper to taste
Topping/Garnish/Base
-2 tbsp chopped parsley
-1 lemon
- ¾ cup coarse rock salt (for propping up oyster shells)

As I told you the last time you posted this vid (still up, it) *lower the temp when adding the butter* if you don’t, your steak will take on an unsavory burned butter taste!

You *gotta* lower the temp of your range for the butter baste (low-medium low is good), otherwise you’ll just burn the butter and spoil your steak’s crust’s flavor! #ForYourHealth 🌈

It is overcooked. Can either sear less or pull out of the oven at 110
Thank you for the helpful tips! I usually cook my steak to medium-rare which seemed to call for about 120 F from the oven.
@@delishdoers but that's not a medium rare, looks medium to medium-well..
@@delishdoers Indeed, if you pull it at 110 and sear for so long + butter baste your final resting temp was probably more around 140-145f.
Yeah looking back, it’s a little too pink for medium rare. We will do another run with 110 F from the oven or shortening the basting time. We’ll post that up shortly :)

Way too much butter plus a good steak doesn’t need all that butter and basting.
I've used butter on any steak, and it makes everything better (heh)
Yeah, we know friends who baste and not baste a good steak. We prefer basting but it’s really a personal preference :) When we do baste though, we tend to use more butter rather than less butter because more butter makes it easier to baste!

The 10 Carbonara Commandments 1. Always use guanciale. If we had wanted bacon, we would have gone to America. 2. No Parmesan, just Pecorino. The person who says half/half has something to hide. 3. Don't boil the egg! It's better to have an infection than scrambled eggs. 4. No onions, no garlic, it's not a stew. 5. No oil, butter or lard. The guanciale must be drained. 6. No chili. You go to Calabria in summer. 7. Do not use any other spices except pepper. If you don't like it, go for an Indian dinner. 8. Anyone who adds cream goes to jail. 9. Never say carbonara and vegan in the same sentence. 10. Tonnarelli, spaghetti, bucatini, rigatoni. All is well, the main thing is that you don't overcook the pasta.
Wow, these are some passionate cooking commandments! I can tell you take this dish very seriously, and I respect that! While I may not follow all of these rules exactly, I love how cooking allows for both tradition and personal creativity. It’s always fun to see how people make classic dishes their own! 😊

Yeah, you can use chili flakes to make it quicker. Fresh chilis are good too if you have the time for it. That’s a good point though. We can make another using chili flakes and Passats tomato purée!
