The "Island Chief" was one of our creations. I wanted to make something a little on the strong side, but with banana flavors. A drink fit for a Chief! - 1/2 oz Lemon Juice - 1 oz Pineapple Juice - 3/4 oz Banana Liqueur - 1/2 oz Demerara Syrup - 3/4 oz Smith & Cross Rum - 1/4 oz White Rum (with a bit of funk, e.g., Probitas or Plantation 3) Flash blend. Lemon wheel garnish or pineapple/cherry.

A good one from Beachbum Berry, c. 2000's, Grog Log. Captures the essence of Tiki 😋 - 3/4 oz Lime Juice - 1/2 oz Grapefruit Juice - 1/4 oz Allspice Dram - 1/2 oz Simple Syrup - 1 oz Dark Jamaican rum - 1 oz Demerara Rum Shake and strain over fresh crushed ice. Lime wedge and mint sprig garnish.

Today's drink is one of our creations, named after my cockatiel! - 2 oz Peach Nectar - 1/4 oz Lemon Juice - 1/4 oz Lime Juice - 1/2 oz Falernum - 1 oz Gosling's Black Seal Rum - 1/2 oz White Puerto Rican/Spanish style rum Shake and open pour. Grate cinnamon on top. Cling peach or lime wheel garnish.

This drink is our version of an espresso martini that we observed a friend of a coworker making. Our version allows the foamy head to form easily. Named after my wife ❤️ V'S ESPRESSO MARTINI - 1 oz Starbucks Espresso & Cream drink - 1 oz Coffee Liqueur - 1 oz Vodka Combine and shake for 30 seconds. Strain into a chilled cocktail glass.

Hey I'm his dad but of course I will tell my dad but he might not share it
"Johnny A" would be my son! I make cinnamon syrup by putting 8 oz of water in a pot with 4 large (or 6 small) Ceylon cinnamon sticks broken up. Bring to a boil then add 8 oz of white sugar. Stir until the sugar is completely dissolved. Immediately cut the heat and let sit for 12 hours. Strain into a suitable container.

The Cadillac from El Torito Grill in Brea is one of the best I ever had. I remember reading on the menu that it came with Cointreau Noir. Don't know if they use just regular Cointreau now since Noir is discontinued

You could halve all the volumes and serve it in a double rocks glass. I’ve done that for my guests who don’t want to get too schnockered.
Thinking a little more about your comment, this drink’s total volume is a carryover from our bar’s first days, where I usually made doubles. I can see now how this might be a little powerful! I’ll take your feedback and alter the description.

Yeah it’s got some kick. I found a copycat recipe a long time ago, since I fell in love with El Torito’s Cadillacs. I’ve slightly tweaked it over the years and this recipe has had the best feedback from friends and family.

I would play around a bit with the Darj Jamaican Rum. There are better expressions on the market than Myers’s
Myers’s is very easy to find around my area. I really want to try Coruba. I might have to order it online, since stores don’t carry it where I live.

Yes, the four ounces of spirits will get ya! You don’t feel the strength as you drink it. I haven’t tried this with an añejo, but I think it would excellent, paired with a finely aged bourbon!
